Black Bean Tostadas

Ingredients

  • 1 tablespoon olive oil
  • 1 clove minced garlic
  • 1 can Eden Organic “No Salt Added” Black Beans
  • 1 small yellow squash, chopped
  • 1 small zucchini, chopped
  • 2 whole grain tortillas
  • 1 small avocado
  • Sea salt and black pepper to taste
  • Low sodium salsa

Preparation

Step 1

1. Preheat oven to 375ºF.
2. Warm skillet over medium heat.
3. Add olive oil to skillet.
4. Add the garlic, black beans, squash and zucchini to the skillet and cook until warm.
5. Meanwhile, crisp the tortillas in the oven (about 7 minutes).
6. Spread avocado on the tortillas and add black bean mixture on top (or slice avocado and put it on top of black bean mixture).
7. Season with salt and pepper.
8. Top with salsa.
Note: you can also eat these as nachos by breaking the crisp tortillas into chips and topping them with the black bean mixture, mashed up avocado and salsa
