Preheat oven to 350°. Heat 1 tablespoon oil in an ovenproof pot over medium-high heat
- 2 Tbsp vegetable oil, divided
- 5 skin-on, bone-in chicken legs (thigh and drumstick)
- Kosher salt and freshly ground black pepper
- 12 oz thick-cut bacon, cut crosswise into 1/3-inch slices
- 3 carrots, peeled, chopped
- 3 celery stalks, minced
- 1 onion, minced
- 4 C dry red wine, such as Burgundy, divided
- 1/2 C tomato paste
- 1 qt low-sodium chicken broth
- 12 sprigs thyme
- 6 sprigs rosemary
- 1 # assorted wild mushrooms, such as oyster and maitake, cleaned, cut into bite-size pieces (about 8 cups)
Cajun Chicken Alfredo 2

Preheat the oven to 350 degrees F
- Kosher salt
- Four 5-ounce boneless, skinless chicken breasts (about 1 1/4 pounds)
- Blackening Spice Rub, recipe follows
- 2 tablespoons olive oil
- 3 tablespoons minced garlic
- 1/4 cup dry white wine
- 3 cups heavy cream
- 1 cup roughly chopped marinated sun-dried tomatoes
- 1 pound fettuccine
- 3/4 cup grated Parmesan
- 1 teaspoon fine sea salt
- 1 teaspoon freshly ground black pepper
- 1/2 cup thinly sliced green onion, for garnish
- 1 tablespoon granulated garlic
- 1 tablespoon freshly cracked black pepper
- 1/2 tablespoon salt
- 2 teaspoons ground cumin
- 2 teaspoons granulated onion
- 1 teaspoon cayenne pepper
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- 1/2 teaspoon chili powder
Tangerine & Jicama Salad

- 3 tangerines, peeled & segmented
- 1 c pineapple chunks, diced
- 3 C Jicama shredded or chopped into matchsticks
- 1/2 C red onion, julieneed
- 1/2 c carrot shredded
- 1/2 C green bell pepper, diced
- 3 T minced fresh cilantro
- 1/3 C fresh Lime juice

- 1 to 1 1/2 cups shredded Cheddar

- 1/2 white onion, finely chopped
- 2 tsp. chili powder
- 6 cups chicken stock, homemade (see related recipe at left) or purchased
- 2 cups shredded cooked chicken, homemade (see related recipe at left) or purchased
- Juice of 3 to 4 limes
- Salt, to taste
- 1 1/2 cups corn tortilla chip pieces
- 1/2 cup crumbled queso fresco, or 1/2 cup shredded Monterey jack cheese
- 1 avocado, halved, pitted, peeled and cubed
- 1/4 cup chopped fresh cilantro
