Peel the cucumbers and cut them in half lengthwise
- 2 English cucumbers
- 1 pound lentils
- Kosher salt
- 1/2 red onion, diced
- 1/2 cup extra virgin olive oil
- Juice of 1 lemon
- Big handful of fresh dill (reserve a bit for garnish and mince the rest)
- Big handful of fresh mint (reserve a bit for garnish and mince the rest)
Butternut Squash Barley Risotto

- 2 tablespoon(s) margarine or butter
- 2 shallots, thinly sliced
- 2 sprig(s) fresh thyme
- 2 cup(s) pearl barley
- 4 cup(s) lower-sodium chicken or vegetable broth

- 1 large (2 1/2-pound) butternut squash, peeled and seeded, cut into 1/2-inch cubes

Au Gratin Mashed Potatoes

Thinly slice potatoes on a mandoline and place in a large pot with milk, cream and salt
