Potato Hash With Spinach and Eggs

Don't limit this quick dish to weeknights; it makes a fabulous brunch offering as well
- 3/4 pound small white potatoes, cut into 1/2-inch pieces
- coarse salt
- 3 tablespoons unsalted butter
- 1 medium yellow onion, diced small
- 1 large red bell pepper, seeded and diced small
- 1/2 teaspoon red-pepper flakes
- 1 package(10 ounces) frozen chopped spinach, thawed and excess liquid squeezed out
- 8 large eggs
- 1 ounce Parmesan(1/4 cup)
- 1 tablespoon chopped fresh parsley
Mark Bove's- Bove's Lasagna

1. To make the meatballs, preheat the oven to 375F
- Meatballs:
- 1 cup grated Pecorino Romano cheese
- 3/4 cup plain dry bread crumbs
- 2 to 4 tablespoons minced garlic, to taste
- 1 teaspoon red pepper flakes
- 1/2 teaspoon freshly ground black pepper
- 3 large eggs, lightly beaten
- 1 pound ground beef (80% lean)
- 1/4 cup olive oil
- Lasagna:
- 2 (26-ounce) jars Bove's Marinara Sauce or your favorite tomato sauce
- 2 tablespoons olive oil, plus more for the baking dish
- 16 dry lasagna noodles
- 4 cups (2 pounds) ricotta cheese
- 6 cups( 1 1/2 pounds) shredded mozzarella cheese
- 4 tablespoons grated Pecorino Romano cheese
- 4 tablespoons chopped fresh flat-leaf parsley
Pumpkin Pie

If candied yams are unavailable, regular canned yams can be substituted
- Crust
- 1 1/4 cups(6 1/4 ounces) unbleached all-purpose flour
- 1/2 teaspoon table salt
- 1 tablespoon sugar
- 6 tablespoons(3/4 stick) cold unsalted butter, cut into 1/4-inch slices
- 1/4 cup cold vegetable shortening, cut into 2 pieces
- 2 tablespoons cold vodka
- 2 tablespoons cold water
- Filling
- 1 cup heavy cream
- 1 cup whole milk
- 3 large eggs plus 2 large yolks
- 1 teaspoon vanilla extract
- 1 (15-ounce) can pumpkin puree
- 1 cup drained candied yams from 15-ounce can
- 3/4 cup sugar
- 1/4 cup maple syrup
- 2 teaspoons grated fresh ginger
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 teaspoon table salt
Green Salad With Orange Marmalade Dressing and Toasted Almonds

1-2 Days Ahead Make the dressing
- For The Salad:
- 5 ounces lightly packed arugula(about 8 cups)
- 5 ounces light packed mesclun greens(about 8 cups)
- 8 medium radishes(about 4 ounces), sliced thin
- 1 cup sliced almonds, toasted
- For The Dressing:
- 6 tablespoons extra-virgin olive oil
- 3 tablespoons orange marmalade
- 3 tablespoons sherry or red wine vinegar
- 1 medium shallot, minced(about 3 tablespoons)
- 1 teaspoon minced fresh thyme leaves
- Salt and ground black pepper

- 1 pound broccoli florets
- 2 Tbs olive oil
- 1 Tbs soy sauce
- 2 tsp fresh lemon juice

Gram Grello's French Meat Pie

Saute meat in butter and cook until no longer pink
- Crust for two 9-inch pies(4 sheets)
- 1 pound ground beef
- 1 pound ground pork
- 1/4 cup butter, unsalted
- 1 small onion, chopped
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 1/4 teaspoon sage
- 1/4 teaspoon parsley
- 1/4 teaspoon nutmeg
- 1/8 teaspoon mace
- 2 cups water
- 2 teaspoons cornstarch diluted with water
- 1 stack unsalted Saltine Crackers, crushed
- Milk for brushing crust

Creamy Macaroni Salad

In a large pot of boiling water, cook pasta according to package instructions
- coarse salt and ground pepper
- 1/2 pound elbow macaroni
- 2 hard-cooked large eggs, whites roughly chopped, yolks left whole
- 1 cup low-fat plain yogurt
- 1 tablespoon mayonnaise
- 1 tablespoon fresh lemon juice
- 4 radishes, quartered and thinly sliced
- 2 celery stalks, thinly sliced crosswise
- 2 tablespoons finely chopped dill pickle
- 2 tablespoons chopped fresh chives
Stir-Fried Shrimp with Garlicky Eggplant, Scallions, and Cashews

- 6 medium garlic cloves, 1 minced or pressed through garlic press, 5 thinly sliced
- 1 pound extra-large (21-25) shrimp, peeled, deveined, and tails removed
- 3 tablespoons vegetable oil
- 1/2 teaspoon table salt
- 2 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 2 tablespoons dry sherry or Shaoxing wine
- 2 tablespoons sugar
- 1 tablespoon toasted sesame oil
- 1 tablespoon white vinegar
- 1/8 teaspoon red pepper flakes
- 2 teaspoons cornstarch
- 6 large scallions, greens cut into 1-inch pieces and whites sliced thin
