Make-Ahead Bran Muffins-Providence Journal Food Section

Fat-free/low fat muffins
- 2 1/2 cups all-purpose flour(or 1 1/4 cups all-purpose and 1 1/4 cups whole-wheat flour)
- 1 cup whole bran cereal
- 1 cup raisin bran
- 1/2 cup wheat germ
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1/2 cup sugar
- 2 eggs
- 3/4 cup unsweetened applesauce
- 1/4 cup molasses
- 2 cups buttermilk (I use powdered buttermilk, which comes in a pouch)
Greek Rice Salad

- 3 tablespoons extra-virgin olive oil
- 3 tablespoons red wine vinegar
- 2 teaspoons honey

- 1 cucumber, peeled, halved lengthwise, seeded, and chopped
- 1 cup cherry tomatoes, halved(quartered if large)
- 1/4 cup pitted kalamata olives, chopped
