  • Notes:
  • 1 cup granulated sugar
  • 5 tablespoons unsalted butter, at room temperature
  • 2 large eggs, at room temperature
  • 3 1/2 cups all-purpose flour, plus additional for work surface
  • 1 1/4 teaspoons salt
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon freshly grated nutmeg
  • 1/2 cup lowfat buttermilk
  • 1/3 cup boiled apple cider(see notes)
  • 1 tablespoon vanilla extract
  • Canola or safflower oil for frying
  • Cinnamon-sugar(see notes) for sprinkling
  • You can buy boiled cider from the King Arthur Catalog or Woodcidermill.com, or you can make it yourself by simmering 1 1/2 cups down in about 25 minutes.
  • To make cinnamon-sugar, mix 1 1/2 cups sugar with 3 tablespoons ground cinnamon.
