Pineapple Upsidedown Pie

I love pineapple upsidedown cake, and my mom would always make one for Christmas
- Pie Crust:
- Preheat oven to 375F
- 3 3/4 cups white or whole wheat white all purpose flour
- 3 sticks butter-frozen
- 1 1/2 teaspoons salt
- 3/4 teaspoon +/- ice water
- 1 1/2 teaspoons sugar
- Filling:
- 1 ripe pineapple cut into small bite-sized pieces
- 1/4 cup corn starch
- 1 cup brown sugar
- 1/4 cup cherry juice
- 1/2 stick butter
- 1/2 teaspoon pure vanilla
- Topping:
- 1 cup white or whole wheat all purpose flour
- 1/4 cup +/- milk or half and half
- 1/2 cup brown sugar
- 3 Tablespoons butter
- 1/2 teaspoon salt(if using salted nuts, may reduce)
- 3/4 cup macadamia nuts-(processed slightly)
- 1/2 small jar maraschino cherries
Baingan Bharta (Eggplant Curry)

1. Preheat oven to 450F. 2
- 1 large eggplant
- 2 tablespoons vegetable oil
- 1 teaspoon cumin seeds
- 1 medium onion, thinly sliced
- 1 tablespoon ginger garlic paste
- 1 tablespoon curry powder
- 1 tomato, diced
- 1/2 cup plain yogurt
- 1 fresh jalapeno chile pepper, finely chopped
- 1 teaspoon salt
- 1/4 bunch cilantro, finely chopped
Salada Mista- Mixed Green Salad

Rinse lettuce and tear into bite-size pieces
- 1 head Romaine lettuce
- 1 head watercress
- 2 tomatoes, sliced
- 1 red onion, thinly sliced
- 1/3 cup olive oil
- 2 tablespoons white wine vinegar
- Salt and coarsely ground black pepper to taste
- 10 black olives

1. Preheat oven to 450F. 2
- 2 cups sifted flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1/2 cup shortening
- 3/4 cup milk
- 6 apples, peeled and cored
- sugar, butter and cinnamon
- 1/2 cup brown sugar, packed
- 1/3 cup butter
- 1 1/3 cups hot water
- dash of cinnamon
- dash of nutmeg
Greek Salad-Salata

Dressing: Combine the ingredients for the dressing in a jar with a tight fitting lid
- Dressing:
- 1 cup olive oil or vegetable oil or equal parts of each
- 1/2 cup wine vinegar
- 2 tablespoons fresh lemon juice
- 1 teaspoon dry mustard
- 1 clove garlic, peeled and left whole
- 1 teaspoon salt
- freshly ground black pepper
- Salad Ingredients:
- 1 clove garlic, peeled
- 2 large heads of lettuce, chopped
- 3 tomatoes, chilled and quartered
- 1 cucumber, peeled, seeded, and sliced
- 6 scallions with greens, thinly sliced
- 10 radishes, thinly sliced
- 1 green pepper, seeded and thinly sliced
- 1 cup(about 1/4 pound) Feta cheese, crumbled
- 1 cup Kalamata olives(or black)
- 1/2 teaspoon oregano
- salt and freshly ground black pepper to taste
- 5 anchovy fillets(optional)

1. Heat oven to 425F. Place 1 pie crust in ungreased 9-inch glass pie plate
- Crust:
- 1 box Pillsbury refrigerated pie crusts, softened as directed on box
- Filling:*
- 6 cups thinly sliced, peeled apples( 6 medium)
- 3/4 cup sugar
- 2 tablespoons all-purpose flour
- 3/4 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- Two cans (21-ounce each) apple pie filling can be substituted for the filling.
