  • 1/2 cup ketchup or chili sauce
  • 4 tablespoons brown sugar

  • 2 teaspoons vegetable oil
  • 1 medium onion , chopped medium
  • 2 medium cloves garlic , minced
  • 2 large eggs
  • 1/2 teaspoon dried thyme
  • 1 teaspoon table salt
  • 1/2 teaspoon ground black pepper
  • 2 teaspoons Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • 1/4 teaspoon hot pepper sauce
  • 1/2 cup whole milk or plain yogurt
  • 1 pound ground beef chuck
  • 1/2 pound ground pork
  • 1/2 pound ground veal
  • 2/3 cup Saltine crackers , crushed (about 16), or quick oatmeal, or 1 1/3 cups fresh bread crumbs
  • 1/3 cup minced fresh parsley leaves
  • 6 - 8 ounces bacon , thin sliced (8 to 12 slices, depending on loaf shape)

  • 4 pounds chicken thighs and breast parts, skin-on, bone-in or for a quicker version use 2 1/2 pounds of chicken breasts.

  • 2 celery stalks, trimmed and cut into 1/2-inch pieces
  • 3 medium carrots, peeled and cut into 1/2-inch pieces

  • 1 teaspoon dried thyme
  • 1/4 cup dry sherry or vermouth (optional)
  • 1 Tbsp of heavy cream (optional)
  • 3/4 cup frozen peas, thawed
  • 1/4 cup minced fresh parsley leaves
  • Ground black or white pepper
  • 2 cups cake flour (can sub all-purpose flour, but use cake flour if you have it, your dumplings will be fluffier)
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 2 Tbsp butter, melted
  • 3/4 cup milk
  • 1/4 cup minced fresh herb leaves such as parsley, chives, and tarragon (optional)
