  • 2 sticks butter, softened
  • 1 cup firmly packed brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 3 cups oats, uncooked
  • 1/2 jar apricot preserves

Step 1

Heat oven to 350°F.

Beat together butter and sugars until creamy, about 2 minutes. Add eggs and vanilla, beat well.

In a large bowl, combine flour, baking soda, cinnamon and salt. Mix well. Stir in oats. Refrigerate 1 hour.

Drop by rounded tablespoons onto ungreased cookie sheet. With your thumb, make an indention in the center of the oatmeal mixture. Fill with 1 teaspoon of apricot preserves. Top with 1 teaspoon oatmeal mixture.

Refrigerate 1 hour (this will help maintain the shape of the cookie).

Bake 10 to 12 minutes or until golden brown.
