Cinnamon Sugar Cupcakes

A combination of cinnamon toast and a doughnut but in a cupcake
- CAKE:
- 1 1/2 cups unbleached all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp ground nutmeg
- 6 Tbsp unsalted butter, room temp
- 1/2 cup sugar
- 1 large egg, lightly beaten
- 1/2 cup milk
- COATING:
- 1/2 cup unsalted butter, melted
- 1 cup sugar
- 2 tsp ground cinnamon

- CAKES:
- 1/4 pound (1 stick) butter, at room temperature
- 1 cup light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 teaspoons baking soda
- 1 teaspoon sea salt
- 2 cups all-purpose flour
- 1/2 cup cocoa
- 1 cup buttermilk
- BUTTERCREAM FILLING:
- 3 large egg whites
- 3/4 cup sugar
- 1/2 pound butter (2 sticks), at room temperature
- 3/4 teaspoon vanilla
- 1/4 teaspoon sea salt.
Curried Eggplant with Tomatoes and Basil

Cook the rice according to the directions
- 1 cup short-grain brown rice
- 1 Tbsp olive oil
- 1 onion, chopped
- 2 pints cherry tomatoes, halved
- 1 eggplant (1 lb), cut into 1/2 inch pieces
- 1 1/2 tsp curry powder
- Kosher salt
- Black pepper
- 15 1/2 oz can chickpeas, rinsed
- 1/2 cup fresh basil
- 1/4 cup plain low-fat yogurt (preferably Greek), optional
Lamb Kebabs with Cucumber-Feta Relish

- 1 cup jasmine rice (or white basmati or long grain white rice)
- 1 1/2 lbs lamb steaks (top round or shoulder), bones removed and meat cut into 1-inch cubes

- 1/2 teaspoon salt
