- Chicken Filling:
- 8 yellow corn tortillas
- 1/2 cup canola oil
- 1/2 cup shredded Monterey Jack cheese
- 1 tomato, peeled, seeded and diced
- 1/2 green bell pepper, diced
- 1/2 medium onion, diced
- 1/2 cup chicken broth or stock
- 1/2 cup tomato sauce
- 1/2 cup salsa
- 1 Tbsp butter
- 1 clove garlic, minced
- dash cumin
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/2 lb cooked chicken, chopped
- 1/3 cup Monterey Jack cheese
- Sour Cream Sauce:
- 1 1/2 cups chicken broth
- 1 tsp fresh lime juice
- 1/8 tsp salt
- 2 Tbsp butter
- 1/4 cup flour
- 1 cup sour cream

- 1/2 cup whole milk
- 1/4 cup heavy cream
- 1 1/3 cups all purpose flour
- 1/3 cup buckwheat flour, preferably stone-ground
- 1/3 cup cornmeal, preferably stone-ground
- 1/3 cup sugar, plus extra for sprinkling
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 6 Tbsp cold unsalted butter
- 3/4 cup coarsely chopped walnuts
