  • 4 large egg yolks, room temperature
  • 1 large whole egg, room temperature
  • 2 ounces sugar, approximately 1/4 cup
  • 3 ounces unsalted butter, melted, approximately 6 tablespoons
  • 6 ounces buttermilk, room temperature
  • 20 ounces all-purpose flour, approximately 4 cups, plus additional for dusting
  • 1 package instant highly active dry yeast, approximately 2 1/4 teaspoons (can be mixed into dry ingredients)
  • 1 1/4 teaspoons kosher salt
  • Vegetable oil or cooking spray
  • 8 ounces light brown sugar, approximately 1 cup packed
  • 1 tablespoon ground cinnamon
  • Pinch salt
  • 3/4-ounce unsalted butter, melted, approximately 1 1/2 tablespoons
  • 5 oz cream cheese, softened
  • 6 tablespoons milk
  • 11 ounces powdered sugar (approximately 3 cups)

This is derived from the Cook's Illustrated recipe, but simplified for slow cooker or oven preparation

  • 1 boneless chuck roast (about 3 1/2 lbs)
  • 2 tablespoons vegetable oil (or bacon grease)
  • 1 medium onion, chopped
  • 3 carrots, peeled and cut into 3 inch spears
  • 1 small celery rib, chopped
  • 2 garlic cloves, minced
  • 2 teaspoons sugar
  • 1 cup low sodium beef broth
  • 1 cup low sodium chicken broth
  • 1 sprig fresh thyme
  • 1 -1 1/2 cup water
  • 1/4 cup dry red wine

  • 1/2 cup plus 2 Tbsp chilled unsalted butter cut into pieces

  • 1 teaspoon cinnamon

  • 2/3 cup pecans
  • FRUIT:
  • 2 cups cranberries
  • 1 cup granulated sugar divided
  • 1 teaspoon finely-grated orange zest
  • 2 teaspoons finely-grated lemon zest divided
  • 1/2 cup water
  • 7 large tart apples peeled, halved, cored, and thinly sliced, see * Note
  • 1/4 cup flour
