Cauliflower au Gratin

- 1 (3-pound) head cauliflower
- 2 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 2 cups hot milk
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon grated nutmeg
- 1/2 cup freshly grated Gruyere
- 1/2 cup freshly grated Cheddar
Overnight Cinnamon Rolls

Recipe adapted from Alton Brown, 2006
- 4 large egg yolks, room temperature
- 1 large whole egg, room temperature
- 2 ounces sugar, approximately 1/4 cup
- 3 ounces unsalted butter, melted, approximately 6 tablespoons
- 6 ounces buttermilk, room temperature
- 20 ounces all-purpose flour, approximately 4 cups, plus additional for dusting
- 1 package instant highly active dry yeast, approximately 2 1/4 teaspoons (can be mixed into dry ingredients)
- 1 1/4 teaspoons kosher salt
- Vegetable oil or cooking spray
- 8 ounces light brown sugar, approximately 1 cup packed
- 1 tablespoon ground cinnamon
- Pinch salt
- 3/4-ounce unsalted butter, melted, approximately 1 1/2 tablespoons
- 5 oz cream cheese, softened
- 6 tablespoons milk
- 11 ounces powdered sugar (approximately 3 cups)
Pot Roast

This is derived from the Cook's Illustrated recipe, but simplified for slow cooker or oven preparation
- 1 boneless chuck roast (about 3 1/2 lbs)
- 2 tablespoons vegetable oil (or bacon grease)
- 1 medium onion, chopped
- 3 carrots, peeled and cut into 3 inch spears
- 1 small celery rib, chopped
- 2 garlic cloves, minced
- 2 teaspoons sugar
- 1 cup low sodium beef broth
- 1 cup low sodium chicken broth
- 1 sprig fresh thyme
- 1 -1 1/2 cup water
- 1/4 cup dry red wine
Cranberry Apple Crisp

- CRISP TOPPING:
- 1/2 cup plus 2 Tbsp chilled unsalted butter cut into pieces
- 1 cup light brown sugar - (packed)
- 1 cup flour
- 1 teaspoon cinnamon
- 1/8 teaspoon salt
- 2/3 cup pecans
- FRUIT:
- 2 cups cranberries
- 1 cup granulated sugar divided
- 1 teaspoon finely-grated orange zest
- 2 teaspoons finely-grated lemon zest divided
- 1/2 cup water
- 7 large tart apples peeled, halved, cored, and thinly sliced, see * Note
- 1/4 cup flour
- 2 tablespoons light brown sugar
- 1 teaspoon cinnamon
- Vanilla ice cream for serving
Migas

One of my favorite breakfast dishes
- 1/2 lb. (225 gm) tomatoes
- 8 eggs
- Salt and freshly ground pepper to taste
- 1 to 2 Tbsp (15 - 30 ml) safflower or canola oil
- 6 to 8 stale corn tortillas, cut into wedges in sixths or eights
- 1/2 small onion, minced
- 2 serrano chilis, seeded and minced
- 1 tsp (5 ml) butter
- 1 (15 ml) Tbsp chopped fresh cliantro
- 1/2 cup (120 ml) grated cheddar cheese
Quick Baked Fish

- 2 lb. fish fillets, Halibut works well
- 1/2 cup milt
- 2 tsp salt
- Panko bread crumbs
- 2 Tbsp oil
Honey Fig Jam

A simple pectin free jam. Makes 8 half-pint jars
- 6 cups finely chopped fresh figs (about 2 1/2 lbs)
- 4 cups light colored honey
- 2 tablespoons lemon juice
- (optional: either 1/2 cup diced crystallized ginger or 1 cup chopped walnuts)
Ancho Chili Sauce

Great for topping burritos and migas
- 3 ancho chili pods (dried)
- 4 cups boiling water
- 1/2 stick butter
- 1/2 cup all purpose flour
- 1/4 cup yellow onions, diced 1/4 “
- 1/4 cup green bell peppers, diced 1/4”
- 1 Tbsp fresh garlic
- 1 Tbsp salt
- 1 Tbsp coarse ground black pepper
- 8 oz tomato sauce
- 2 Tbsp ground cumin
- 2 Tbsp chili powder
Zucchini Fries

Preheat oven to 425˙F. Line a baking sheet with parchment paper or spray it with cooking spray
- 1 cup plain bread crumbs (homemade or storebought)
- 1/4 cup grated Parmesan or pecorino
- 1 teaspoon crushed red pepper (scale back to 1/4 teaspoon if youre adverse to spice)
- 1/8 teaspoon dried oregano
- 1/8 teaspoon salt
- Dash of pepper
- 2 large eggs, beaten
- 4-5 zucchini
