Banana Sour Cream Pancakes

In a medium bowl, sift together the flour, sugar, baking powder and salt
- 1 1/2 cups all-purpose flour
- 3 Tbsp sugar
- 2 tsp baking powder
- 1 1/2 tsp kosher salt
- 1/2 cup sour cream
- 3/4 cup plus 1 Tbsp milk
- 2 extra large eggs
- 1 tsp pure vanilla extract
- 1 tsp grated lemon zest
- Unsalted butter
- 2 ripe bananas, diced, plus extra for serving
- Pure maple syrup
Pecan Baked Ham

- 1/4 cup pecans, chopped
- 1 cup brown sugar
- 1 tablespoon Chinese five-spice powder
- 2 tablespoons butter, softened
- 1 (5-pound) good quality cooked ham
- 2 medium onions, chopped
Turkey Burgers

Spray a small saute pan with olive oil and heat over medium-high ehat
- 1/2 medium onion, finely chopped
- 1 pound finely ground turkey, 70% white meat and 30% dark meat
- 1 Tbsp Dijon mustard
- 1 Tbsp Worchestershire sauce
- 1/2 tsp chopped fresh thyme leaves, or 1/4 tsp dried
- 3/4 tsp kosher salt or to taste
- 1/4 tsp freshly ground black pepper or to taste
Caramel Mocha Cupcake

- COFFEE GANACHE:
- 2 tablespoons powdered instant espresso
- 1/4 cup boiling water
- 1-1/2 cups heavy cream

- 1/3 c. granulated sugar
- 1/4 c. boiling water
- 3/4 c. butter

Caramel Pears

In a saucepan, combine water, sugar, juice of oranges and lemon and a strip of orange zest
- 8 cups water
- 2 cups sugar
- Orange Zest, large strip
- 4 oranges, juiced
- 1 lemon, juiced

Celery Root Remoulade

Use a serrated knife to peel the celery root of all the brown outer portions, like peeling a pineapple
- 2 pounds celery root
- 1 3/4 teaspoons kosher salt
- 3 tablespoons freshly squeezed lemon juice
- 1 cup good mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon whole-grain mustard
- 2 teaspoons Champagne vinegar or white wine vinegar
- Pinch freshly ground black pepper
PEACH OR PEAR PRESERVES
