Easy Chicken and Cheese Enchiladas

Heat oven to 350 degrees. Stir soup, sour cream, picante sauce and chili powder in medium bowl
- 1 can cream of chicken soup
- 1/2 cup sour cream
- 1 cup Pace Picante Sauce
- 2 teaspoons chili powder
- 2 cups chopped cooked chicken
- 1/2 cup shredded Monterey Jack cheese
- 6 flour tortillas (6 inch), warmed
- 1 small tomato, chopped
- 1 green onion, sliced
Crock-Pot BBQ Shredded Chicken

Add all the ingredients, other than the chicken into the bowl of a crockpot and stir to combine
- 3 pounds boneless, skinless chicken breasts (about 6 large)
- 1 tbsp onion powder
- 1 tbsp paprika
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup beer (any kind you like)
- 3-3 1/2 cups of barbecue sauce
Chicken and Mushroom Stroganoff

Combine first five ingredients in food processor to make parsley butter
- 4 T softened butter
- 1 t minced garlic
- 1/4 cup minced parsley
- 1/2 t salt
- 2 T sour cream
- 3 T olive oil
- 1-1/4 lb boneless skinless chicken breasts, cut into 1/2 inch x 2 inch strips
- 3/4 t salt
- 1/4 t black pepper
- 1 cup thinly sliced red onion
- 1-1/2 cups sliced mushrooms
- 3/4 cup red wine
- 1-1/2 t Worcestershire
- 1 cup beef stock
- 2 t cornstarch
- 3/4 cup sour cream
- 12 oz dry wide egg noodles
- Sour cream
- Italian parsley sprigs
Honey BBQ Pork Ribs

Arrange ribs and onion, alternating layers
- 4 lbs pork spareribs or babybacks
- 1 onion
- 1 16 oz bottle BBQ sauce
- 1/2 cup honey
Cabbage Soup

in soup pot, over medium-high heat, combine all ingredients
- 2 (28 oz.) cans crushed tomatoes
- 1 (12 oz.) can tomato paste
- Juice of 1 lemon
- 4 beef bouillon cubes
- 8 cups water
- 1 cup granulated sugar
- 8 cups coarsely chopped green cabbage (1 1/2 to 2 lbs.)
Lemon Bundt Cake w/ cake mix

- 1 box Duncan Hines Lemon Supreme Cake Mix
- 1/4 cup sugar
- 4 eggs
- 1 cup apricot nectar
- 3/4 cup Crisco oil
Ribs BBQ (Slow Cooker)

The meat falls off the bone as you take them out of the crock pot!
- 4 pounds Ribs of your choice
- 2 teaspoons Worcestershire sauce
- 1 teaspoons vinegar
- salt and pepper to taste
- 1 bottle of sweet baby rays BBQ
- 2 tablespoons brown sugar
- 1 teaspoons oregano
Baked Fried Chicken (KFC?)

Place thawed chicken breast tenderloin strips in a bowl of milk
- Chicken tenderloin strips
- 1/2 tsp. salt
- 1 T Season-All
- 3/4 tsp. pepper
- 1 C flour
- 2 tsp. paprika
Oriental Chicken

Marinate chicken thighs in the dark soy sauce for at least 1 hour
- 2 lbs boneless skinless chicken thighs
- 2 tablespoons garlic, minced
- 3 green onions, chopped
- 6 teaspoons ginger powder
- 1/4 cup soy sauce
- 8 tablespoons chicken broth
- 3 tablespoons oyster sauce
- 3 tablespoons rice wine
- 3 teaspoons light soy sauce
- 1 teaspoon Splenda sugar substitute
- 1 tablespoon cornstarch, dissolved in water
Shrimp or Scallop Scampi

- 1 lb shrimp or small scallops
- 1/4 lb butter
- 1 cup breadcrumbs
- 1 teaspoon chopped garlic in oil
- 1 teaspoon lemon juice
- 1 pinch paprika
- 1 pinch parsley flakes
