Sweet and Sour Shrimp

In large skillet, combine pineapple juice, water, lemon juice, sugar, cornstarch, soy sauce and ginger
- 1 pound medium shrimp, peeled and deveined
- 1 (20 oz.) can pineapple chunks in juice, drained, reserving juice
- 3/4 cup cold water
- 1/3 cup lemon juice
- 1/3 cup firmly packed light brown sugar
- 3 tablespoons soy sauce
- 1/8 teaspoon ground ginger
- 1 (8 oz.) can sliced water chestnuts, drained
- 1 green pepper, cut into chunks (or red, cut into strips)
- 4 cups cooked white rice
Crockpot Beef Roast

Place the meat on the bottom of the slow cooker, add the rest of the ingredients
- 3 lbs. London broil, cut into 3 pieces (or top round or flank steak)
- 1 can chicken broth
- 1 can cream of mushroom soup
- 1 (24 oz.) can crushed tomatoes
- 4 whole cloves garlic, peeled
- 2 tablespoons Worcestershire
- 1/2 onion, sliced in large slices
- 2 carrots, peeled and chopped into 1-inch chunks
- 1 celery stalk, chopped
- 2 sprigs of thyme
- Salt and pepper to taste
Easy Coconut Cream Pie

Beat pudding mixes and milk in large bowl with whisk 2 minutes
- 2 (3.4 oz.) packages vanilla instant pudding
- 2 cups cold milk
- 2 cups thawed Cool Whip, divided
- 1 cup Baker's angel flake coconut, divided
- 1 ready-to-use graham cracker crumb crust (6 oz.)
Cheddar Biscuits

Preheat oven to 425 degrees
- 1 1/2 cups self-rising flour
- 1 tablespoon sugar
- 1/3 cup butter
- 1/2 cup milk
- 1 cup (4 ounces) shredded sharp Cheddar cheese
Porcupine Meatballs

Pour sauce into a large skillet
- 2 (8 oz.) cans tomato sauce
- 2 tablespoons packed brown sugar
- 1 lb. lean ground beef
- 1/4 cup quick-cooking rice
- 1 teaspoon Worcestershire sauce
- 1 beaten egg
Ham Tetrazzini

Preheat oven to 400 degrees
- 1 (8 oz.) package spaghetti
- 3/4 oz. Parmesan cheese, freshly grated
- 1 (1 lb.) ham slice, cut into small bite-size pieces (2 1/2 cups) or chop ham into 1/2 pieces in the food processor
- 1 medium onion, sliced
- 1/4 lb. fresh mushrooms, sliced
- 1 celery stalk, sliced
- 6 tablespoons butter
- 6 tablespoons flour
- 2 cups chicken broth
- 1/4 teaspoon pepper
- 1 cup milk
- 3 tablespoons sherry
Aunt Adelaide's Apple or Cherry Delight

Crust: Crush crackers with a rolling pin (not blender)
- Crust:
- Preheat oven to 375 degrees.
- 30 graham cracker squares
- 1/2 cup butter, melted
- Layer one:
- 1 (8 oz.) package cream cheese, softened
- 2 small packages Cream Whip
- 1/2 cup confectioners' sugar
- chopped nuts (optional)

- 2 (3 oz.) packages cream cheese, softened
- 1/2 cup milk
- 2 cups confectioners' sugar

- Layer two:
- 1 pint whipping cream
- 2 tablespoons sugar
- 2 teaspoons vanilla
- 1 can pie filling (apple or cherry)
Cube Steak and Gravy

- 4 cube steaks
- Salt and pepper to taste
- 1/2 cup flour
- 1/4 cup vegetable oil
- 2 cans beef broth
- 1 can golden mushroom soup
- 1 white onion, cut into 1/4-inch slices and separated into rings
Asiago & Pear Pork tenderloin

- Pork tenderloin- approximately 1lb.
- 1 cup of applesauce
- 1 cup of apple or pear juice
- 4-6 oz. of asiago cheese shredded
- I fresh or can of pears in juice

- 1 1/2 cups all-purpose flour
- 1/2 cups powdered sugar
- 1/4 teaspoon salt
- 1 stick cold, unsalted butter, cut into cubes
- 1 large egg yolk
- for the filling:
- 2 cups whole milk
- 6 large egg yolks
- 1/2 cup light brown sugar
- 1/3 cup cornstarch, sifted
- pinch of salt
- 1 teaspoon pure vanilla extract
- 3 tablespoons unsalted butter
- 2 ripe bananas, sliced
- 10 fresh strawberries, sliced
- for the topping:
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
