Slow Cooker Potato Soup

Combine first six ingredients in slow cooker
- 2 (20 oz.) packages refrigerated diced potatoes with onion
- 1 (32 oz.) container chicken broth
- 1/4 cup butter
- 2 teaspoons garlic salt
- 1-1/4 teaspoon freshly ground pepper
- 1 can cream of potato soup, undiluted or cream of chicken
- 1 (8 oz.) container sour cream or cream cheese
- 1-1/2 cups shredded extra-sharp Cheddar cheese, divided
- 3 tablespoons chopped fresh chives or onion flakes
- 4 fully cooked slices bacon, chopped
Chipped Beef

Place beef in a medium bowl and add enough warm water to cover
- 2 (2 1/2 oz.) jars sliced dried beef, cut into 1/2-inch strips
- 2 tablespoons butter
- 2 tablespoons flour
- 1/4 teaspoon onion powder
- 1/4 teaspoon black pepper
- 1 cup milk
- 1 teaspoon Worcestershire sauce
- 4 slices white bread, toasted and cut in half diagonally
Chicken and Rice (Slow Cooker)

Place all ingredients in slow cooker, mix well, and cook on low for six hours
- 2 lbs. boneless, skinless chicken breasts, cut in 1-inch cubes
- 2 (6 oz.) packages wild and long-grain converted rice mix with seasoning packets
- 2 1/2 cup water
- 1 can condensed broccoli cheese soup
- 1 stick butter, melted
- 2 medium onions, finely chopped
- 1 cup broccoli florets (fresh or frozen)
- 1/2 lb. processed cheese spread, cut into 1/2 inch cubes
Cuban Black Bean Soup

In a large saucepan or Dutch oven combine salsa, beans, broth, water, ham and cumin
- 1 16 oz. jar mild or medium thick-and-chunky red salsa or red salsa with lime and garlic
- 1 15 oz can black beans, rinsed and drained
- 1 14.5 oz. can chicken broth
- 1 3/4 cups water
- 1 1/2 cup cubed cooked ham
- 1 teaspoon ground cumin
- 1/2 cup sour cream
- Lime-flavor tortilla chips
Key Lime Cake w/ Cake Mix

1. Preheat oven to 350°F
- Glaze:
- 1 pkg Duncan Hines® Moist Deluxe® Lemon Supreme Cake Mix
- 1 (3.4 oz) pkg lemon instant pudding and pie filling
- 4 large eggs
- 1 cup vegetable oil
- 3/4 cup water
- 1/4 cup Key lime juice
- 2 cups confectioners' sugar
- 1/3 cup Key lime juice
- 2 tbsp water
- 2 tbsp butter or margarine, melted
- Garnish:
- additional confectioners' sugar, lime slices and fresh strawberry slices
Apple Cinnamon Muffins

Preheat oven to 375 degrees
- 1 1/2 cups flour
- 1/3 cup sugar
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon, divided
- 1/2 teaspoon salt
- 1 egg
- 1/2 cup milk
- 1 medium apple, peeled, core, and finely chopped
- 4 tablespoons (1/4 cup) butter, melted
- 1/3 cup chopped nuts (walnuts or pecans)
- 1/4 cup packed brown sugar
Beef Burgundy

Brown meat in Dutch oven with a little oil
- 1 1/2 lbs. beef cut into 3/4-inch cubes
- 1 clove garlic
- 1 medium onion, chopped
- 2 carrots, diced
- 3 stalks celery, diced
- 1 can tomato soup
- 1/2 package onion soup mix
- 3/4 cup dry red wine
- 1/2 cup water
- 1/2 cup ketchup
- 1/4 teaspoon basil
- 1/4 teaspoon thyme
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
Pork Roast (Slow Cooker)

Season roast with salt and pepper
- 4 lb. pork shoulder roast boneless
- Salt to taste
- Freshly ground pepper to taste
- 1 T. vegetable oil
- 2 shallots, sliced
- 1 celery rib, chopped
- 1/2 C apple cider vinegar
- 2 1/2 C apple cider
- 4 cloves garlic, peeled
- 1 bay leaf
- 1 1/2 tsp. Dijon mustard
- Cayenne pepper to taste
- 2 T butter, cold, cut into small pieces
- 1 T. herbs, chopped fresh, Italian parsley, sage, or thyme
Creamy Chicken and Noodles

Spray large nonstick saucepan with cooking spray; heat over medium-high heat
- Pam cooking spray
- 1 lb. boneless skinless chicken breasts, cut into 1-inch pieces
- 1/2 cup chopped onion
- 3 cups water
- 1 (6 oz.) can tomato paste
- 3 cups dry extra-side noodles, uncooked (4 oz.)
- 1 (10 oz.) container refrigerated light Alfredo sauce
- 1 package (6 oz.) baby spinach leaves
Daddy Wu's Carrot Dressing and Salad

Place salad dressing ingredients in a food processor and process until sooth
- 3 medium-size carrots, around 3 cups
- 1/4 cup red onion
- 2 tablespoons mirin
- 1/3 cup white vinegar
- 2 tablespoons sesame oil
- 2 lemons, 1 zested, both juiced
- 2/4 cup honey
- Salt, to taste
- 3 romaine hearts, chopped
- 1 cup green cabbage, shredded
- 1/2 cup red onion, sliced
- 1 yellow pepper, diced
- 1 English cucumber, sliced on bias
- 2 scallions, cut into 2-inch pieces and thinly sliced, soaked in ice water
- 1/2 cup snap peas, sliced on a bias
- 1 small bunch radish, English breakfast, sliced thin
