Fresh Tomato Mozzarella Salad

Place tomato and mozzarella chunks in a large bowl
- 4 medium-sized ripe tomatoes, cut into large chunks
- 1 pound fresh mozzarella cheese, cut into 1-inch chunks
- 1/2 cup olive oil
- 1/4 cup balsamic vinegar
- 2 tablespoons chopped fresh basil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Best Cookie Ever

- 1/2 lb. (2 sticks) butter, softened
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups flour
- 2 1/2 cups plain uncooked oatmeal
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 (12 oz.) bag chocolate chips
- 1 ( 8 oz.) Hershey bar, grated
- 1 1/2 cups nuts, chopped (almonds, walnuts or pecans)
Broccoli Casserole

Preheat oven to 350°F. Spray a 13" x 9" baking dish with vegetable oil cooking spray
- 1 package frozen chopped broccoli or one bunch, cooked & drained
- 1/2 cup mayonnaise
- 1/2 cup grated Cheddar cheese
- 1/2 can condensed cream of mushroom soup
- 1 egg beaten lightly
- 1 cup crushed snack crackers
- 1 tablespoon butter melted

- 4 cups low-sodium vegetable stock
- 1 1/2 cups water
- 2 (14.5 oz) cans diced tomatoes
- 1 cup diced celery (3 stalks)
- 1 cup diced carrots (2 carrots)
- 1 cup diced yellow onion (1 small)
- 1 Tbsp chopped fresh parsley (or 1 tsp dried)
- 2 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- 1/2 tsp dried crushed rosemary
- 2 bay leaves
- 1/2 tsp sugar
- Salt and freshly ground black pepper, to taste
- 1 1/3 cups diced zucchini (1 small)
- 1 1/3 cups shell pasta
- 4 cloves garlic, minced
- 1 (15 oz) can dark red kidney beans, drained and rinsed
- 1 (15 oz) can white navy beans or cannellini beans, drained and rinsed
- 1 (14.5 oz) can Italian green beans, drained
- 2 cups slightly packed chopped fresh spinach
- Finely shredded Romano cheese, for serving (Parmesan works too)

Creamy Rice Pudding

- 1/4 cup (1/2 stick) butter, softened
- 1 cup sugar
- 4 eggs
- 3 cups (1 1/2 pints) half-and-half
- 2 cups cooked rice
- 1/2 cup raisins
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
Beef Tenderloin

1. Let the tenderloin sit at room temperature, covered, for 1 hour before roasting

- 2 pound beef tenderloin , center-cut, silver skin removed and tied at even intervals
