Cowboy Oatmeal and Butterscotch Cookies

Preheat the oven to 350 degrees F (175 degrees C)
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup margarine
- 1/2 cup vegetable oil
- 1 cup packed brown sugar
- 1 cup white sugar
- 1 teaspoon vanilla
- 2 eggs
- 2 cups quick cooking oats
- 1 cup butterscotch chips
Strawberry Jello Poke Cake

Bake cake according to box directions in a 9x13 pan
- 1 box white cake mix, and ingredients it calls for
- 1 cup boiling water
- 1 (3 oz.) packet strawberry jello
- 1 cup cold water
- 8 oz. whipped topping, thawed
- 1/4 cup powdered sugar
- 1/4 teaspoon almond extract
- sliced strawberries
Pasta e Fagioli Soup (Olive Garden)

Brown the ground beef in a large saucepan or pot over medium heat
- 1 lb. ground beef
- 1 small onion, diced (1 cup)
- 3 stalks celery, chopped (1 cup)
- 2 cloves garlic, minced
- 2 14.5-ounce cans diced tomatoes
- 1 15-ounce can red kidney beans (with liquid)
- 1 15-ounce can great northern beans (with liquid)
- 1 15-ounce can tomato sauce
- 1 12-ounce can V-8 juice
- 1 tablespoon white vinegar
- 1 1/2 teaspoon salt
- 1 teaspoon oregano
- 1 teaspoon basil
- 1/2 teaspoon pepper
- 1/2 teaspoon thyme
- 1/2 pound (1/2 package) ditali pasta
Country Chicken and Rice

I halved the recipe and it worked just fine
- 1 (3- to 3 1/2 lb.) chicken, cut in pieces (I used thighs)
- 6 cups water
- 2 (15. oz.) cans tomato sauce
- 1 large onion, finely chopped
- 1 teaspoon dried thyme
- 1 tablespoon salt
- 1 teaspoon pepper
- 2 cups long- or whole-grain rice
Easy Baked Shrimp Scampi (15 minutes)

Preheat oven to 450°. Prepare linguine
- 1/2 cup butter
- 1/2 cup olive oil
- 2 Tablespoons of horseradish or Dijon mustard
- 2 Tablespoons of white wine (or a little more if you like)
- 1 Tablespoon lemon juice
- Crushed red pepper flakes (optional)
- 1 Tablespoon minced garlic
- Fresh parsley to garnish (or a teaspoon of dried to mix in if fresh is not available)
- 1 – 2 pounds shrimp (depending on how many you will eat)
- 1 lb. linguine or other pasta, prepared al dente
Key West Grilled Chicken

Place the chicken in a shallow dish; set aside
- 1 1/2 lbs. boneless and skinless chicken breast halves
- 3 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon olive or vegetable oil
- 1 teaspoon lime juice
- 1 teaspoon garlic powder

1. Preheat the oven to 350°F
- 3-oz package lime-flavored gelatin
- 1 1/3 cups granulated sugar
- 2 cups sifted all-purpose flour
- 1/2 tsp salt
- 1 tsp baking powder
- 1 tsp baking soda
- 5 large eggs, slightly beaten
- 1 1/2 cups vegetable oil
- 3/4 cup orange juice
- 1 Tbsp lemon juice
- 1/2 tsp vanilla extract
- 1/2 cup Key lime juice (from about 25 small Key limes or 4 large regular limes)
- 1/2 cup confectioners’ sugar
Meatloaf, Glazed

1. Preheat oven to 350 degrees
- Meatloaf:
- 1 Tbsp olive oil
- 1 1/2 cups onion, chopped
- 3 garlic cloves, minced
- 2 large eggs
- 1/2 cup milk, plus milk to soak breadcrumbs
- 3 tsp Dijon mustard
- 1 1/2 tsp hot sauce
- 1/2 teaspoon dried marjoram
- 1 tsp Worcestershire sauce
- Fresh ground pepper
- 1 1/2 lb extra lean hamburger
- 1/2 lb lean ground pork
- 1 1/2 cups fresh bread crumbs, soaked in milk to cover and wrung out
- 1/4 cup fresh parsley, minced
- Glaze:
- 1/2 cup ketchup
- 1/4 cup light brown sugar
- 1 1/2 Tbsp cider vinegar
Beef Pot Roast, Chuck (Slow Cooker)

Spray inside of 4-quart slow cooker with cooking spray
- No-Stick Cooking Spray
- 1 teaspoon Vegetable Oil
- 1-3/4 pounds boneless beef chuck roast
- 2 cups baby carrots
- 6 small red-skinned potatoes, cut in quarters
- 2 cans (8 oz each) Tomato Sauce-No Salt Added
- 1 jar (12 oz each) beef gravy
- 1 envelope (1 oz each) dry onion soup mix
Oven Roasted Potatoes, Parmesan Garlic

Preheat oven to 450 °F. Cut potatoes into cubes or wedges
- Potatoes Cut in to smaller size pieces (I use Russet Potatoes)
- A few tablespoons of olive oil
- 2-3 cloves garlic, minced
- 1 to 2 Tablespoons fresh chopped parsley
- Fresh grated Parmesan cheese
- Salt and pepper, to taste
