Heat 2 tbsp olive oil in lg skillet over med-high heat, add chorizo, cook, breaking up until crispy- 4-5 min
- 2 tbsp olive oil
- 1/3 lb raw mexican chorizo, casings removed
- 4 - 6 inch corn tortillas, torn into bite-size pieces
- 1 med onion, chopped
- 1 jalapeno, seeded and chopped
- 2-3 garlic cloves, finely chopped
- 8 eggs, lightly beaten
- hot sauce
- salt & pepper
- 2 plum tomatoes, diced
- 1 ripe avocado, diced
- juice of 1 lime
