- 2 med shallots - thinly sliced
- 16 sage leaves
- 1/4 tsp kosher salt
- 1/4 tsp pepper
- 3/4 cup grated parmesan cheese
Honey Mustard Mint Burgers with Grilled Pineapple

Prepare grill for grilling with medium heat
- 1/4 cup honey
- 1/4 cup Dijon mustard
- 2 tbsp finely chopped mint leaves
- 1/4 tsp salt
- 1/8 tsp pepper
- 20 oz ground turkey
- 5 pineapple slices
- 1 tbsp oil
- 5 hamburger buns
- 1 cup arugula or torn lettuce
Chorizo-Potato Tacos

Put the potatoes in a microwave safe bowl with 1/2 cup of water and season with salt
- 2 med red skinned potatoes, cut into 1 inch chunks
- Kosher salt
- 2 tbsp veg oil
- 1 med yellow squash, diced
- Fresh ground pepper
- 8 oz chorizo or other spicy sausage, casings removed
- 2 med tomatoes, diced
- 1 scallion, minced
- 1 jalapeno pepper, minced
- 1/3 cup fresh cilantro, chopped
- 8 corn tortillas
- 1/4 cup crumbled cotilla or feta cheese
- Sour cream and/or guacamole for serving (optional)
Grilled Vietnamese Style Chicken Wings

Rinse the wing pieces under cold water and pat dry with paper towels
- 3 to 3 1/2 pounds wings, separated at the joints, wing tips reserved for another purpose
- 2 tablespoons roughly chopped garlic
- 1/4 cup chopped shallots
- 1/4 cup chopped fresh ginger
- 3 tablespoons chopped green onion bottoms
- 1/2 cup roughly chopped lemongrass bottoms
- 3 tablespoons packed light brown sugar
- 1/3 cup fish sauce
- 3 tablespoons lime juice
- 3 tablespoons peanut oil
- 1 teaspoon salt
- 1/4 cup dry-roasted peanuts, chopped
- 1/4 cup chopped fresh cilantro leaves

Heat oil in med saucepan over med heat, add onions, peppers, and mushrooms
- 1 tbsp olive oil
- 1 1/2 cups thinly sliced onions
- 1 each red and yellow peppers, thinly sliced
- 1 cup sliced mushrooms
- 2 tsp finely chopped garlic
- 1 pkg sweet italian sausage tortellini (9oz), prepared according to directions
- 1/4 cup chopped basil
- salt and pepper
Tortellini with Raisin Butter

- 2 pkgs(7 oz ea) meat filled tortellini
- 4 tbsp butter (1/2 stick)
- 2 tsp veg oil
- 8 oz mushrooms, sliced
- 1/4 cup pine nuts
- 1/4 cup raisins
California Roll Salad

Pour rice into med bowl, add 1 tbsp vinegar, set aside
- 1 cup rice, cooked
- 3 tbsp seasoned rice vinegar
- 1 head boston lettuce
- 1 cucumber, thinly sliced
- 1 avocado, sliced
- 1 lb imitation crabmeat, broken into chunks
- 3 tbsp soy sauce
- 2 tbsp slivered pickled ginger

- 12 oz ground beef
- 1 pkt taco seasoning mix
- 1 can kidney beans, rinsed
- 1/3 cup each ranch dressing and salsa
- 8 cups salad greens
- 2 cups broken tortilla chips
- 1 cup cherry tomatoes, cut in half
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped red onion

- 9 oz pkg cheese ravioli (or any flavor)
- 2 tbsp milk
- 1 egg
- 1 cup italian flavored bread crumbs
- veg oil for frying
- 2 tbsp shredded parmesan cheese
- 1 cup spagetti sauce
