Turkey Salad with Cranberries and Pecans

We serve this over a bed of spinach instead of the lettuce leaves.

Ingredients

  • 2 cups diced turkey breast
  • 1 small Grannysmith apple, peeled, cored and diced
  • 3 tbsp dried cranberries, coarsely chopped
  • 2 tbsp chopped pecans
  • 1 11oz can mandarin oranges, drained and cut into small sections
  • 1/4 cup fat free plain yogurt
  • 1 tbsp reduced fat mayo
  • 1 1/2 tsp brown mustard
  • 1/2 tsp salt
  • Fresh ground black pepper
  • 8 Boston lettuce leaves

Preparation

Step 1

In a mixing bowl, combine the turkey, apple, cranberries and pecans.
In a small bowl combine the yogurt, mayo, and mustard. Season to taste with the salt and pepper.
Drizzle the dressing over the turkey mixture and mix gently.
Place 2 lettuce leaves on each of 4 plates and place 1/4 of the salad on top of each set of leaves. Serve immediately.
