Chocolate Dump Cake

- 5 oz non-instant choc pudding
- 2 1/3 cups milk
- choc cake mix
- 2 cups semi-sweet choc chips
Not Your Mama's Nachos

Brush the tortillas with 2 tbsp olive oil, then stack and cut into quarters
- 8 6-inch tortillas
- 3 tbsp extra virgin olive oil
- 1 onion, finely chopped
- 2 cloves garlic, finely chopped
- 1 1/4 pounds broccoli florets
- 15 oz can cannellini beans, rinsed
- 12 oz shredded cheddar cheese (we like smoked)
- 1 cup salsa verde
- 1/4 cup plain greek style yogurt
- -optional-
- We really like to add italian sausage and Trader Joes Corn Salsa to this too.
Lena's Bread Pudding

This is a great custard-type pudding from my grandmother!
- 1 can sweetened condensed milk
- 3 cups hot water
- 2 cups diced soft bread crumbs
- 2 eggs
- 1 tbsp melted butter
- 1/4 tsp salt
- 1 tsp vanilla (or Bailey's Irish Creme)
- nutmeg, if desired
Chicken Tamale Casserole

Preheat oven to 400. Combine 1/4 cup cheese and next 7 ing (through chiles) in lg bowl, stir until just moist
- 1 cup shredded mexican blend cheese, divided
- 1/3 cup skim milk
- 1/4 cup egg substitute
- 1 tsp cumin
- 1/8 tsp red pepper
- 1 can cream style corn
- 1 box jiffy corn muffin mix
- 4 oz can chopped green chiles, drained
- cooking spray
- 10 oz can red enchilada sauce
- 2 cups shredded cooked chicken breast
- 1/2 cup sour cream

- 4 cups diced rhubarb
- 3/4 cup sugar
- 3 oz pkg strawberry or raspberry jello
- 1 box white or butter cake mix
- 3/4 cup water
- 1 cup butter, melted
Vermont Quesadillas

- 1/4 cup sugar
- 1/2 tsp apple pie spice

- 1/2 lb honey baked ham slices

Cilantro Turkey Burgers with Chipotle Ketchup

- 1/3 cup dry breadcrumbs
- 1/4 cup minced fresh cilantro
- 1/4 cup shredded parmesan cheese
- 1/4 tsp salt
- 1/4 tsp blk pepper
- 1 lb ground turkey
- cooking spray
- 7 oz can chipotle chiles in adobo sauce
- 1/4 cup ketchup
- 4 hamburger buns
Tres Leches Donut Holes

Poke donut holes with skewer several times each
- 2 dozen glazed donut holes (cake or choc)
- 1 cup whole milk
- 1/2 cup evap milk
- 1 cup sweetened cond milk
Chocolate-Dipped Kettle Chips

- 4 oz dark chocolate, broken into small pieces
- 1 tsp veg oil
- 9 oz bag salted kettle-cooked potato chips
- chopped pistachios, coarse salt and cayenne for sprinkling

- 2 cups whole almonds
- 1 cup sugar
- 4 egg whites, room temperature
- Pinch of salt
- 1/2 tsp vanilla extract
