- BROWNIES:
- Vegetable oil spray, for pan
- Flour, for dusting pan
- 2 (20-ounce) packages brownie mix, I pre
- 12 tablespoons butter, melted, 1 1/2 sticks
- 1/2 cup buttermilk**
- 4 large eggs
- 2 teaspoons pure vanilla extract
- FROSTING:
- 12 tablespoons butter, 1 1/2 sticks
- 1/2 c unsweetened cocoa powder
- 1/2 cup milk
- 5 1/2 About 5 1/2 cups powdered sugar
Taco Soup

- 1 lb ground beef
- 1/2 an onion (chopped)
- 1 can corn (undrained)
- 3 cans of beans (undrained)*
- 1 can diced tomatoes (undrained)
- 1 can Rotel (pureed)
- 1 pkt taco seasoning mix
- 1 pkt ranch dressing
- 2 c water
- Fritos (if desired)
Strawberry Trifle

1. In a bowl, beat the milk, sour cream, pudding mix and orange peel on low speed until thickened
- 1 c cold milk
- 1 c (8oz) sour cream
- 1 pkg (3.4 oz) instant vanilla pudding mix
- 1 tsp grated orange peel
- 2 c heavy whipping cream, whipped
- 8 c cubed angle food cake
- 4 c sliced strawberries
Slow cooker pesto mozzarella chicken pasta

1. Add the chicken to the slow cooker
- 1.5 lbs of chicken breasts
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 c jarred pesto
- 1/4 c salted butter
- 1/2 lemon
- 1 lb rotini cooked and drained
- 1/2 c parmesan
- 2 c c shredded mozzarella
- 1/4 tsp dried basil to garnish

Oven Roasted Cauliflower

Heat oven to 450 degrees F
- 1 medium head cauliflower (about 2-1/4 pounds), trimmed and cut into florets
- 3 large cloves garlic, thinly sliced
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons grated Parmesan cheese

Crunchy Parmesan Chicken

- 3/8 c grated Parmesan Cheese
- 1/8 c dry bread crumbs
- 1/2 tsp paprika
- 1/4 tsp salt
- Dash of pepper
- 4 chicken breasts
- 1 egg, beaten
- 1 tbsp milk

- Marinade:
- 1 can (11oz) shoe peg white corn (drained)
- 1 can (15oz) gaya black beans (drained and rinsed)
- 1 bunch of green onions, chopped (greens and white)
- 1 4 oz package of feta cheese crumbles
- Then garlic, salt and pepper to taste
- 1/2 c sugar (you can use Splenda)
- 1/2 c apple cider vinegar
- 1/3 cup olive oil
- (prepare and add to above, 2-3 hours prior to serving)
- Tip: I add the cheese right before serving
