Creamy Apple and Oat Puree

1. Put the apples in a saucepan with the water
- 3 sweet apples, peeled, cored, and thinly sliced
- 2 Tbs. water
- Pinch of ground cinnamon (optional)
- 1 tsp. agave nectar (optional - to add more sweetness)
- Per portion
- 1 Tbs. baby oats
- 2 Tbs. breast milk or formula

Key Lime Pie

For Crust: 1. Preheat oven to 325
- Piecrust:
- 1/3 c sugar
- 1 stick unsalted butter, at room temp
- pinch of salt
- 1 1/2 c plus 2 TBSP flour
- 1 extra large egg
- 1/2 tsp vanilla extract
- 2 TBSP molasses
- 1/2 TBSP ginger
- 1/4 tsp ground cinnamon
- Filling:
- 1 (14 oz can) sweetened condenced milk
- 1/2 c key lime juice
- 4 extra-large egg yolks
- 1 tsp vanilla extract
Corn on the grill

Grilled garlic parmesan corn: corn olive oil 1 1/2 tbsp
- Regular:
- Fresh Corn on the cob
- Olive oil
- salt
- pepper garlic salt
- butter (after grilling)
- (drizzle olive oil, sprinkle with salt, pepper and garlic salt, cook med heat for 20 min, rotating occasionally, serve with butter)
- Ranch style corn:
- corn
- olive oil
- packet ranch dressing
- (brush oil on, sprinkle ranch, wrap in foil, bake 20 min turning occasionally)
Mini Pasta Cups

1. Preheat oven to 350 and line muffin tins with foil and paper liner 2
- 1 lb small pasta shells or elbow noodles cooked
- 1 lb ground beef browned
- Favorite spaghetti sauce
- Shredded mozzarella and parmesan
- Whatever spices you want (maybe Italian seasoning?)
- you can add pureed carrot to the sauce to make it healthier.
Lemon Sponge Puddings

1. Heat oven to 325. You need 8 ramekins or custartd cups and a roasting pan large enough to hold them
- 1 1/4 c whole milk
- 3 large eggs, yolks and whites separated
- 1 TBSP grated lemon zest
- 1/3 c fresh lemon juice
- 2 TBSP unsalted butter or margarine, softened
- 1 c sugar
- 1/2 c flour
- Garnish: Raspberries
Chicken Mac 'n' cheese

1. In a large pot of boiling salted water, cook pasta according to pkg directions until al dente; drain
- TIPS:
- 1 lb cavatappi or elbow pasta
- 1 1/2 TBSP butter
- 1 c fresh bread crumbs
- 1/2 c fresh grated Parmesan cheese
- 1/3 c chopped fresh Italian parsley
- 1 qt milk
- 1/3 c flour
- 2 tsp minced garlic
- 3 c shredded extra sharp cheddar cheese
- 1 lb smoked chicken, diced (abt 4 cups)
- 2 tsp Dijon mustard
- 1 tsp salt
- 1/2 tsp pepper
- use less pasta or try in 9x13 in baking dish
- Breading: 1 c bread crumbs, 1/2 c parm, 1 tbsp parsley, some cyanne pepper, and italian seasoning.
- Use Colby jack cheese insead of Sharp Cheddar cheese
- try using the texas roadhouse spices. (cut up chicken and sprinkle with texas roadhouse spices.)
- try using 3 cheese fresh takes pasta bake and baking the food before cutting it up and adding it to the dish.
Chicken tortilla soup
