1. Prepare the nut crust and set aside

Peach and Pistachio Trifle

Whip the cream in a large bowl until soft peaks form
- 3/4 cup plus 1 tablespoon heavy cream
- Scant 1 cup mascarpone cheese
- Zest and juice of 1 large orange
- 1/2 teaspoon vanilla extract or paste
- 1 cup powdered sugar
- 2 X 14 ounce cans peach halves in juice
- 2 tablespoons Madeira wine or sweet sherry
- 1/2 brioche loaf or 1 loaf Madeira cake, cut into 1/2-inch thick slices
- 1 cup pistachio nuts in shell, shelled and skinned if possible, coarsely chopped
- A small handful of mint leaves
- 2 tablespoons runny honey

1. Heat the oven to 375 degrees and grease a muffin tin
- 130 grams all-purpose flour (about 1 cup)
- 100 grams whole-wheat flour (about 2/3 cup)
- 50 grams oats (about 1/2 cup)
- 55 grams light brown sugar (about 1/3 cup)
- 13 grams baking powder (about 1 tablespoon)
- 3 grams fine sea salt (about 1 teaspoon)
- 3 grams ground cinnamon (about 1 teaspoon)
- 1/4 teaspoon nutmeg
- Zest of 1 lemon, finely grated
- 2 large eggs, room temperature
- 1/2 cup Greek yogurt, room temperature

Simple Tomato Sauce

- 4 garlic cloves, thinly sliced
- 1/4 teaspoon red chile flakes (optional)
- 2 (28-ounce) cans whole or diced plum tomatoes
