Black Pepper and Bourbon Caramel Chews

- 420 grams granulated sugar (about 2 cups)
- 2 cups heavy cream
- 6 tablespoons honey
- 2 tablespoons bourbon
- 1/4 teaspoon fine sea salt

Place a rack in lower third of oven; preheat to 350°
- All-Butter Pie Dough
- All-purpose flour (for surface)
- 5 large eggs
- 3 heads of garlic, cloves peeled

- 1 Tbs pure maple syrup

Remove one-half of the pastry dough from the refrigerator 10 minutes before rolling
- Pastry for a 9-inch double-crust pie, refrigerated
- 4 sweet potatoes (about 3 pounds)
- 1 1/4 cups sugar
- 2 tablespoons flour
- 1 teaspoon ground allspice
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 2 tablespoons cream, evaporated milk or half-and-half
- 1/3 cup molasses, sorghum, pure cane syrup or honey
- 1/2 cup hot water, reserved from the sweet potatoes' cooking liquid

1. To prepare cake: Preheat oven to 350 degrees F
- 1/2 cup whole-wheat pastry flour
- 1/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2/3 cup whole almonds
- 2 tablespoons low-fat milk
- 2 tablespoons canola oil
- 1/2 teaspoon almond extract
- 4 large eggs, at room temperature (see Cake-Baking Tips), separated
- 3/4 cup sugar, divided
- 2/3 cup raspberry jam
- 1 tablespoon confectioners' sugar, for garnish
- 1/2 pint (about 1 1/4 cups) fresh raspberries, for garnish (optional)

- 4 ears fresh corn, shucked
- 1 1/2 cups milk
- 2 cups heavy cream
- 225 grams granulated sugar (about 1 cup plus 1 tablespoon)

- 1/4 teaspoon fine sea salt

- 8 tablespoons coconut oil or softened butter
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 2 tablespoons almond milk
- 1/3 cup maple syrup
- 1/2 cup almond flour or oat flour
- 1 1/4 cups oat flour (you can make your own oat flour by blending oats in a blender)
