Overnight Chocolate Chia Pudding

This can be blended or not
- 1 1/2 cups (360 ml) unsweetened almond milk
- 1/3 cup (63 g) chia seeds
- 1/4 cup (24 g) cacao or unsweetened cocoa powder
- 2-5 Tbsp (30-75 ml) maple syrup if not blending OR 5-9 dates, pitted if blending
- 1/2 tsp ground cinnamon (optional)
- 1/4 tsp sea salt
- optional: 1/2 tsp vanilla extract
Hummingbird Cake

Directions For Cake: Preheat oven to 350° F
- CAKE:
- 3 cups sifted all-purpose flour
- 2 cups sugar
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 3/4 teaspoon salt
- 1/4 teaspoon finely grated nutmeg
- 1 1/3 cups corn oil or vegetable oil
- 3 large eggs, well beaten
- 2 teaspoons vanilla extract
- 2 cups finely chopped bananas (about 2 large)
- 1 can (8-ounces) crushed pineapple (do not drain)
- 1 cup coarsely chopped pecans or walnuts
- FROSTING:
- 2 packages (8 ounces each) cream cheese, at room temperature (use “light” [Neufchâtel], if you like)
- 3/4 cup (1 1/2 sticks) butter, at room temperature
- 2 packages (16 ounces each) confectioners’ (10 X) sugar
- 2 teaspoons vanilla extract
- 1/4 teaspoon almond extract
- 1/8 teaspoon salt
- 1/2 cup coarsely chopped pecans or walnuts
Filet Mignon with Mushroom Red Wine Sauce

- 4 cups coarsely grated sweet potatoes
- 1/2 cup grated onion
- 3 to 4 tablespoons fresh squeezed lemon juice
- Freshly ground pepper, to taste
- 4 eggs, beaten
- 1/3 cup flour
- Neutral oil, such as canola or grapeseed, for frying
- crème fraîche, sour cream, yogurt, or apple sauce for serving
- Caviar for serving (optional)
- Fresh chives, minced, for sprinkling
Coconut Mashed Yams With Currants

- 3 large garnet or other yams, peeled and cut into 2-inch pieces
- 1 cup canned coconut milk, mixed well before measuring
- 1/3 cup maple syrup or packed brown sugar
- 1/2 teaspoon sea salt
