- 4 firm-ripe avocados, peeled, seeded and chopped
- 3 tablespoons fresh lemon juice
- 3 tablespoons minced shallots
- 1 teaspoon minced garlic
- 3/4 ¾ teaspoon slat
- 1/4 ¼ teaspoon ground white pepper
- 1 cup cold heavy cream
- 1/2 ½ cup chopped fresh chives

- 4 Tablespoons flour (8 if Banana Pudding or Coconut Pies)
- 4 Tablespoons Cocoa
- 4 egg yolks
- Dash salt
- 1-cup water
- 1 can evaporated milk
- 2 cups sugar
- 1 stick butter
- Dash Vanilla

- 1 cup shortening
- 2 eggs beaten
- 1 cup white sugar
- 1 cup brown sugar
- 2 teaspoons baking soda
- 1 cup crunchy Peanut Butter
- 3 cups flour
- 1/2 teaspoon salt
- 1 teaspoon vanilla
Kung Pao Chicken

- 1 pound of boneless skinless chicken, Breasts or Thighs
- 1 tablespoon cornstarch
- 1 egg white
- 1 small green bell pepper
- 1 small piece fresh ginger (1 inch long), peeled
- 1 glove garlic
- 1 tablespoon dry sherry
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon sugar
- 1/4 ¼ teaspoon red pepper flakes
- 1/4 ¼ teaspoon salt
- 1/4 ¼ cup vegetable oil
- 2 green onions with tops, cut into 1 ½ inch pieces
- 1/3 cup unsalted dry roasted peanuts (I use cashews)
- Hot cooked rice
