Crawfish Spinach Madeleine

Cook spincah according to directions on package
- 2 packages frozen, chopped spinach
- 4 tablespoons butter
- 2 tablespoons diced onions
- 2 tablespoons flour
- 1/2 cup evaporated milk
- 1/2 cup reserved spinach liquor
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon black pepper
- 3/4 teaspoon celery salt
- 3/4 teaspoon garlic salt
- 6 ounces Monterey Jack cheese, sliced into 1/4 inch cubes
- 1 tablespoon minced jalapenos
- salt and cayenne pepper to taste
Cheese and Tamale Pie

Preheat oven to 400 degrees
- 1 lb. ground beef, lean
- 1 large onion, chopped
- 1 large green bell pepper, chopped
- 1/2 C Salsa
- 1 (15.5 oz) can pinto or kidney beans, unsalted (drained)
- 1 (14.5 oz) can diced tomatoes, no salt (drained)
- 1/2 tsp salt
- 1/2 C chopped cilantro
- 2 C shredded sharp Cheddar cheese, divided
- 1 1/2 c self rising yellow cornmeal mix
- 1 C milk (2%)
- 1 large, egg lightly beaten
Citrus Spice Churros

In a medium saucepan, combne the 1 teaspoon sugar with the butter, salt and 1 cup of water
- 1 teaspoon sugar, plus 1 cup for coating
- 2 tablespoons butter
- pinch of salt
- 1 cup flour
- 3 eggs
- 1/2 teaspoon vanilla
- zest of one orange
- zest of one lemon
- 1 teaspoon Baker's Sprinkles (or a combo of cinnamon, nutmeg, ginger, whatever you like)
- Vegetable oil

- 2 • 2 tablespoon(s) molasses
- 1/2 • 1/2 tablespoon(s) ground ginger

Gaga’s Goulash

Brown meat and onions. Add chili seasoning while browning hamburger
- 1 pound ground beef
- 1 medium onion, diced
- 3 to 4 teaspoons Williams chili seasoning
- 1 (14-oz.) can diced tomatoes
- 1 can water
- 2 1/4 teaspoons Better Than Bouillon beef broth
- 1/2 teaspoon sugar
- 1/4 cup dried small pasta shells
- Salt and pepper, to taste
Lasagne

In dutch oven cook and stir meats until brown
- 1 pound ground beef
- 1/2 ½ pound ground lean pork (I use 1 pound sausage and ½ pound beef)
- 1 can 28 ounces whole tomatoes
- 1 can 12 ounces tomato paste
- 2 teaspoons garlic salt
- 1 1/2 1 ½ teaspoons oregano leaves
- 1 teaspoon basil leaves
- 2 cups creamed cottage cheese
- 12 ounces shredded mozzarella cheese
- 12 ounces lasagne noodles
- 1/2 ½ cup grated parmesan cheese
SPICY CHICKEN CANAPÉS

1. Cook fillo pastry shells as directed and set aside
- 12 frozen mini fillo pastry shells
- 1 1/2 cups cooked chicken (shredded)
- 2 scallions (sliced - white parts separated from green parts)
- 1/4 cup endive or romaine lettuce (sliced thin)
- 1/4 cup mayo
- 1-2 tbsp Sriracha
- Salt and pepper if needed
Pork Medallions with spicy marmalade sauce

Combine the marmalade, vinegar, honey, Asian chili sauce, and pinch of salt
- 12 • 12 ounces sweet orange marmalade
- 4 • 4 tablespoons cider vinegar
- 2 • 2 tablespoons honey
- 1 • 1 tablespoon Asian hot garlic chili sauce or a dash or more of other hot sauce
- • Pinch salt
- 2 • 2 pounds pork tenderloins
- 1/2 • 1/2 cup all-purpose flour
- 1/2 • 1/2 teaspoon salt
- 2 • 2 Tablespoon olive oil
- • Dash ground black pepper
Holiday Beef Tenderloin with Horseradish cream

Remove the meat from the refrigerator and let come to room temperature, about 1 hour
- 5 pound Whole beef tenderloin
- 2 tablespoons olive oil
- for rub
- 2 tablespoons kosher salt
- 1 tablespoon coarsely ground black pepper
- 1/2 teaspoon minced garlic
- 1/2 teaspoon cayenne pepper
- for the horseradish cream
- 1 pint heavy cream
- 2 tablespoons horseradish
- juice of 1/2 lemon
- fine-grain sea salt
