Tequila Feta Frijoles

Saute onion in oil in a saute pan over medium high heat until softened, about 4-5 minutes
- 1/4 cup white onions, diced
- 1 tablespoon olive oil
- 2 -3 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground coriander
- (or use 2 teaspoons Chimayo Spice Mix)
- 2 tablespoons tequila
- 4 cups pinto beans, drained and rinsed
- 1/2 cup chicken broth
- juice of one lime
- 2 large handfulls cilantro leaves, chopped
- salt and pepper
- Serrano or Japaleno pepper, thingly sliced and seeded, if desired
Baked Buffalo Wings

Preheat oven to 425 degrees
- 5 pounds frozen chicken wing pieces, thawed
- 1 bottle Durkee Hot Sauce
- 1 stick melted butter
- 1 package Hidden Valley Ranch powder dressing mix
Prosciutto, Spinach, and Pasta Casserole

1. Cook pasta according to the package directions
- 2-2/3 cups dried bow ties, penne, or ziti (8 ounces)
- 2 medium onions, cut into thin wedges, or 5 medium leeks, sliced
- 2 cloves garlic, minced
- 1 tablespoon butter or margarine
- 1/4 cup all-purpose flour
- 1/2 teaspoon anise seeds, crushed
- 1-3/4 cups milk
- 1-1/2 cups chicken broth
- 1/4 cup grated Parmesan cheese
- 1 10-ounce package frozen chopped spinach, thawed and well drained
- 2 ounces prosciutto, cut into thin bite-size strips
- 1 medium tomato, seeded and chopped
Mustard Dill Sauce

Mix well until thoroughtly combined
- 1 tablespoon sugar
- 1 tablespoon dried dill (more if fresh)
- 2 tablespoons Dijon mustard
- 2 teaspooon powdered mustard
- 1 teaspoon vinegar
- 1/4 cup olive oil
- 4 tablespoons mayonnaise
Dulce de Leche Sauce

Submerge unopened can of condensed milk in a large, deep pot of water and bring to a boil
- 1 14 ounce can sweetened condensed milk
- 2 tablespoons liqueur of choice

- 1 tablespoon dried thyme
- 1 tablespoon dried oregano
- 1 tablespoon ground cumin
- 1 tablespoon paprika
- 1 teaspoon onion powder
- 1/2 teaspoon salt

- • 1 cup yellow cornmeal
