Whole-wheat Pancakes with Blueberries & Toasted Almonds

In a large bowl, combine the whole-wheat flour, white flour, oats, baking powder, baking soda, sugar, and salt
- 1/3 cup quick-cooking oats
- 1-1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 3 Tbsp. sugar
- 1 tsp. salt
- 5 Tbsp. unsalted butter, melted
- 2-1/2 cups reduced-fat buttermilk
- 2 eggs, beaten
- Nonstick spray
- 1 — 2 cups fresh blueberries
- 1 — 2 cups slivered or sliced almonds, toasted
- Light maple syrup, to serve
Oven Fried Chicken

Directions Preheat the oven to 400 degrees F
- Nonstick cooking spray, for spraying the rack and chicken
- 2 1/4 cups broken bagel chips or Melba toast
- 1 1/3 cups rice-corn crispy cereal, such as Crispix
- 1 tablespoon canola oil
- 2 teaspoons kosher salt
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon sweet paprika
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup light mayonnaise
- 1 teaspoon Dijon mustard
- 4 bone-in, skinless chicken pieces, about 6 ounces each (see Cook's Note)
Latin American Chicken Stew

Sprinkle chicken with oregano, salt and pepper
- 1 1/4 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 Tbsp chopped fresh oregano leaves
- 1/8 tsp salt
- 1/4 tsp pepper

- 1/2 cup chopped green bell pepper

- 1/2 lb. ground beef
- 1/4 cup onion, chopped
- 1/4 cup green peppers, chopped

- 3/4 cup canned black beans, drained and rinsed
- 1/2 tsp. smoked paprika

- 1/2 tsp. chili powder
- 1/8 teaspoon cayenne

- Cornbread Topping:
- 3/4 cup cornbread mix
- 1 egg
- 3 Tbsp. milk
- 1/3 cup cheddar, shredded

- 4 c apples, peeled and thinly sliced

- 2 c powdered sugar
- 1 Tbsp butter, softened
- 1/2 tsp apple pie spice or a combination of cinnamon, nutmeg and cloves

- 1/4 cup cider vinegar
- 1/4 cup orange juice
- 2 tablespoons minced fresh parsley
- 2 tablespoons honey

- 1/2 teaspoon salt
