Black Bean Salsa

Mix anf chill overnight
- 2-15 oz cans black beans,drained and rinsed
- 1-17 oz package frozen corn
- 2 large tomatoes, diced
- 1 small onion, diced
- 1/4 c chopped cilantro
- 2 T lime juice

Joyce's Artichoke Dip

Mix all ingredients well and bake at 325 degrees for 45 minutes
- 8 oz. cream cheese
- 1/2 c sour cream
- 1/2 c mayonaise
- 2 cans artichoke hearts
- 1/2 c parmesan
- minced garlic
Amaretto Float

Place 2 scoops ice cream in each of 6 glasses
- 1 1/2 quart vanilla ice cream
- 1 1/2 c espresso, chilled
- 3/4 c amaretto
- 2 c cream soda, chilled
Beth's Crab Dip

IN glass bowl, mix crab, onions, cucumber, tomato and parsley
- 2-6 oz lump crab
- 2 green onions
- 1/2 diced cucumber
- 1/2 c diced red onion
- 1 medium diced tomato
- 2 T parsley, minced
- 1/4 c lime juice
- 1/4 c orange juice
- 1/4 c lemon juice
- 2-8 oz cream cheese
- 1/4 c mayonaise
- 1 diced avocado

Neely's Coconut Bundt Cake

Mix dry ingredients. Cream butter and sugar for about 5 minutes
- 2 1/2 cup flour
- 1/2 tsp salt
- 2 tsp baking powder
- 2 sticks butter, softened
- 2 1/2 cup sugar
- 6 large eggs
- 1 tsp vanilla 1 tsp coconut extract
- 1 can (1 cup) coconut milk
- 1/2 cup coconut
Classic Cup Cookies

Mix flour, baking soda, cream of tarter
- 2 1/4 c flour
- 1 t baking soda
- 1 t cream of tarter
- 1 c butter
- 1 1/2 c powdered sugar
- 1 egg
- 4 t orange zest
- 1/4 t orange extract
- 1 1/2 c chopped pistachios
- 1 1/2 c dried cranberries
- white chocolate, melted
