Ingredients

  • 2 1/2 cup flour
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 2 sticks butter, softened
  • 2 1/2 cup sugar
  • 6 large eggs
  • 1 tsp vanilla 1 tsp coconut extract
  • 1 can (1 cup) coconut milk
  • 1/2 cup coconut

Step 1

Mix dry ingredients. Cream butter and sugar for about 5 minutes. Beat in eggs, one at a time. Add extracts. Stir in coconut milk. Beat. Bake at 350 for 1 hour and 10 minutes.

4 tbl pineapple juice
