- Chicken Bites
- 1 1/2 lbs boneless, skinless chicken breasts (about 3)
- 1 can of Thai Kitchen Coconut Milk
- 1 1/2 cups unsweetened, shredded coconut
- 1/4 cup Clubhouse Rice Flour
- Clubhouse Ground Black Pepper to taste
- Thai Mango Mayo
- 1/2 cup mayonnaise
- 1/4 tsp Thai Kitchen Spicy Thai Chili Sauce
- 1 tbsp Thai Kitchen Spicy Thai Mango Sauce
- 1 tsp fresh lime juice
- 2 – 3 tbsp fresh chopped cilantro
Gluten Free Afredo Sauce

Melt butter and add garlic in a medium sauce pan
- 1 lb gluten free pasta
- 2 Tbsp Earth Balance or GF margarine
- 2 garlic cloves, minced
- 2 Tbsp gluten free flour
- 3/4 cup GF chicken or beef broth
- 3/4 cup non-dairy milk (almond, rice or soy works fine)
- 2 tsp parsley flakes
- salt and pepper, to taste

Gluten Free Buttermilk Cornbread

Preheat oven to 350 degrees F
- 1/2 cup butter or margarine
- 2/3 cup white sugar (less if you want)
- 2 eggs
- 1 cup buttermilk
- 1/2 tsp baking soda
- 1 cup cornmeal
- 1 cup all-purpose gluten-free flour (see Note)
- 1/2 tsp xanthan gum
- 1/2 tsp salt
- NOTE: The all-purpose gluten-free flour mix that I use is from Cybele Pascal. It is as follows: 4 cups superfine brown rice flour, 1 1/3 cups potato starch (not flour), 2/3 cup tapioca starch.
Chipotle Chicken Taco Salad

To prepare dressing, combine first 7 ingredients, stirring well
- 1/3 cup chopped fresh cilantro
- 2/3 cup light sour cream
- 1 tablespoon minced chipotle chile, canned in adobo sauce
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 4 teaspoons fresh lime juice
- 1/4 teaspoon salt
- 4 cups shredded romaine lettuce
- 2 cups chopped roasted skinless, boneless chicken breasts (about 2 breasts)
- 1 cup cherry tomatoes, halved
- 1/2 cup diced peeled avocado
- 1/3 cup thinly vertically sliced red onion
- 1 (15-ounce) can black beans, rinsed and drained
- 1 (8 3/4-ounce) can no-salt-added whole-kernel corn, rinsed and drained

- 2 cups Flour
- 2 tsp Baking Powder
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 1/4 cup butter, softened
- 1/2 cup sugar
- 2 eggs
- 1 cup Mango tangerine beverage
- 1 cup mango chopped (frozen or thawed)
Quick Paleo English Muffins

Instructions Melt the butter or oil in a round, glass or ceramic ramekin ( I used a 3½ inch, 6 ounce ramekin)
- 1 Egg, beaten
- 1 Tbsp Milk of Choice ( unsweetened Coconut Milk, Almond Milk, or organic half and half).
- 1 Tbsp Coconut Flour, where to buy coconut flour
- 1/2 Tbsp Melted grass Fed Butter or Coconut Oil, melted, where to buy coconut oil
- 1/8 Tsp Baking Soda mixed with 1/4 Tsp Apple Cider Vinegar in separate pinch bowl ( this replaces baking powder) * could omit, but it won’t rise much.
- 1/8 Tsp Vanilla Extract * optional, I omit if I’m making something savory like an egg sandwich.
- 1/4 Tsp Honey or ( 6 drops liquid Stevia for low carb) * Optional, can omit sweetener, but use full fat canned coconut milk for milk of choice.
- 1 Pinch Sea Salt * optional
