Creamy Mushroom and Herb Sauce with Whole Grain Pasta
By weavincanuck
Bring a large pot of water to boil for pasta
- Optional Garnishes:
- 3 About 3 tablespoons EVOO – Extra Virgin Olive Oil
- 2 tablespoons butter
- 1 pound cremini mushrooms, wiped and thinly sliced
- 2 large shallots, finely chopped
- 4 cloves garlic, finely chopped
- 2 About 2 tablespoons finely chopped thyme
- 2 sprigs rosemary, finely chopped
- 1 large fresh bay leaf
- Salt and pepper
- 2 About 2 tablespoons double-concentrated tomato paste, from a tube
- 1/2 About 1/2 cup dry sherry or Marsala wine
- 1 cup heavy cream
- A few grates nutmeg
- 1 pound whole wheat or whole grain pasta – long or short cuts both work with this sauce, I enjoy linguini with it
- Grated Parmigiano-Reggiano, a couple of handfuls plus some to pass at table
- Chopped toasted hazelnuts
- Chopped flat-leaf parsley or watercress
Chicken Tikka Masala

1. Preheat oven to 500F. 2
- Chicken Marinade
- 3 boneless skinless chicken breasts
- 1/2 yogurt
- 1 lemon
- 6 cloves minced garlic
- 1 tbsp minced ginger
- 2 tsp salt
- 2 tsp cumin powder
- 2 tsp garam masala
- 2 tsp paprika
- Sauce
- 3 tbsp oil
- 1 onion finely chopped
- 2 tbsp minced ginger
- 8 cloves minced garlic
- 2 tsp cumin
- 2 tsp tumeric
- 2 tsp ground coriander
- 2 tsp paprika
- 2 tsp chili powder
- 2 tsp garam masala
- 1 tbsp tomato puree
- 3 1/2 cups tomato sauce or crushed tomatoes
- 1 1/4 cup water
- 1 cup cream
- fresh coriander for garnish
Sunflower Salad

Mix all the above and layer with cheese and then black olives
- 3-4 eggs boiled/ cooked
- 1 cup Mayo
- 1 can large black olives cut.
- 1/2 onion chopped
- 1 can shredded chicken
- 1 cup shredded cheese(yellow)

Potato Soup with Ham

Combine everything except cream cheese
- 1 30 oz bag of frozen shredded hashbrowns
- 1 can of GF Cream of Chicken Soup
- 1/2 cup chopped onion
- 36 oz GF Chicken Broth
- 1/4 tsp pepper
- 1 pkg cream cheese
Cauliflower Breadsticks

Preheat oven to 425°F and line a baking sheet with parchment paper
- 1 head cauliflower, riced
- 1/2 cup shredded Mozzarella Cheese
- 1/2 cup shaved Parmesan Cheese
- 1 large egg
- 1/2 tablespoon freshly minced garlic
- 1/2 tablespoon freshly chopped basil
- 1/2 tablespoon freshly chopped Italian flat-leaf parsley
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 3/4 cup shredded Mozzarella Cheese

BEST EVER gluten-free chocolate chip muffins

Preheat the oven to 400 degrees F
- 1 3/4 cups GF All-Purpose Flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 1/2 tsp xanthan gum
- 2 TB organic cocoa powder
