No knead Oatmeal Bread

A yummy bread good toasted, plain with butter or as a sandwich
- 1 3/4 cups lw water
- 1 cups milk
- 1/2 cup maple syrup
- 1 Tb butter &/or coconut oil
- 1 Tb salt
- 1/2 cup oat bran
- 1/3 cup wheat bran
- 1/2 cup oats
- 1/2 cup whole wheat flour
- 4 1/4 cups ap flour 1 1/2 Tb yeast
Black & White Bars

A real new York tradition but loved everywhere
- Frosting:
- 3/4 cup butter
- 1 3/4 cup sugar
- 1/4 cup light brown sugar
- 4 eggs
- 2 tsp vanilla
- 2 cups flour
- 3/4 tsp salt
- 1/2 tsp baking powder
- 2 cups chopped nuts
- 3 oz 1/2 cup unsweetened choc, melted & cooled.
- 3/4 cups cranberries
- 3/4 cup chopped white chocolate
- 3/4 cup chopped dark chocolate
Basic country loaf

This is a great basic loaf can also be changed up with addition of herbs, olives, seeds & the like
- 2 1/2 cups lukewarm water
- 3 tsps yeast
- 1 cup white whole wheat or spelt flour
- 5 cups all purpose flour
- 1 tsp kosher or sea salt or bread salt
- Seeds for top of loaf
Sticky Toffee pudding w sauce

- Sauce:
- 5 ounces dates
- 1/2 cup + 6 Tb butter at room temp
- 1 cup dark brown sugar
- 1 1/4 cups ap flour
- 2 tsp baking powder
- 4 eggs room temp
- 1 tsp vanilla
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1/2 tsp cloves
- 1/2 tsp nutmeg
- 1/2 cups dark brown sugar
- 2/3 heavy cream
- 1/2 cup butter at room temp.
Olive Loaf

A recipe w/ green olives & herbs
- 2 1/2 cups water
- 1 Tb oil
- 1 cup white wheat flour
- 5 cups AP flour
- 1 1/2 tsp salt
- 1 Tb sugar
- 3 Tb yeast
- 1 cup chopped olives
- 2 Tsp herbs de Provence
- 2 cups chopped hazelnuts or walnuts
- 1 Tb Zest of lemon
Cinnamon Raisin Walnut Bread

Great breakfast bread
- 1 1/2 cups water
- 1 cup buttermilk
- 2 eggs lightly beaten
- 4 Tb shortening
- 7 cups bread flour
- 3 Tb sugar
- 3 tsp salt
- 4 tsp yeast
- 2 1/2 tsp cinnamon
- 1/2 cups raisins
- 1/2 cups chopped walnuts

- 3/4 cup flour ( you can use AP, I blend pastry flour & AP for a lighter cupcake)
- 1/2 cup cocoa powder (I use dark)
- 1 tsp baking powder
- 1/2 tsp salt (I use kosher or sea salt)
- 1/2 cup (1 stick) softened unsealed butter,
- 2 eggs
- 1 cup +2 Tb sugar
- 1 tsp vanilla
- 1/2 cup milk
Straight sour sourdough bread

Tangy really sour bread
- Day 1:
- 2 cups fed starter
- 3 cups lukewarm water
- 4 1/2 tsp kosher or sea salt2 Tb honey or maple syrup grade B
- 4 cups bread flour
- 2 cups spelt flour
- Day 4:
- Add to poolish:
- 3 cups bread flour
- 1 cup spelt flour
- Note: bread flour can be used for all flour in this bread

- 1 3/4 cups egg whites (approx 14 eggs)
- 1 1/2 cups light brown sugar, pressed through strainer to sift
- 1 1/2 tsp cream of tartar
- 1 cup sifted cake flour, sift again & again
Butter icing
