Cinnamon Raisin Walnut Loaf

Easy tasty bread great for breakfast or in bread pudding
- 2 1/2 cups water
- 1 cup buttermilk
- 2 eggs lightly beaten
- 4 Tb shortening
- 7 cups bread flour
- 3 Tb sugar
- 3 tsp salt
- 2 1/2 tsp cinnamon
- 1 cup raisins or cranberries
- 1 cup chopped walnuts
- 4 tsp yeast
- Egg wash
- Cinnamon sugar for topping
Mocha Swirl Bread w/ Espresso Icing

A nice quick bread
- Bread:
- 1 Slightly rounded tsp espresso powder
- 1 Tb boiling water
- 3/4 cup from age fraise or sour cream or cream cheese
- 1/2 cup cornmeal
- 1 stick soft butter
- 1 cup sugar
- 3 eggs
- 1 2/3 cups flour
- Baking powder/soda as appropriate (to substitute for self rising flour.)
- 1/2 tsp baking soda
- 1 tsp vanilla
- 2 Tb cocoa powder
- Espresso icing:
- 2/3 cup conf sugar
- 1 slightly rounded tsp espresso powder
- Scant 1 Tb cream cheese (from bread cheese)
No Knead Chocolate Espresso Whole Wheat Bread

A dark rich loaf that can be made into muffins
- 4 cups whole wheat flour
- 8 cups AP flour
- 2 cups cocoa powder
- 3 Tb yeast
- 1 Tb salt
- 1/2 cup vital gluten
- 4 1/2 cups water
- 3 tsp espresso powder
- 8 eggs
- 1 cup coconut oil
- 1 1/2 cups honey or maple syrup
- 12 oz finely chopped or sm chips of bittersweet chocolate
- Egg wash (1 egg whipped w/ 1/2 cup water)
- Coarse raw sugar to sprinkle
No Knead Oatmeal Date/Raisin Bread

A tasty bread nice for breakfast, bread pudding & French toast!
- 3 cups water
- 1/3 cups maple syrup
- 1/4 cup butter &/or coconut oil
- 3 cups whole wheat flour
- 2 cups AP flour
- 2 cups steel cut oats
- 1/4 cup vital gluten
- 11/2 Tb salt
- 1 1/2 Tb yeast
- 1/2 cups raisins/dates
- 1/2 cups nuts
- Egg wash
- Coarse raw sugar
Double lemon spritz cookies

Really light & lemony. A nice crisp cookie made with a cookie press
- 1/4 cup of butter (or 1/8 cup butter & 1/8 cup coconut oil for healthier cookie).
- 1 cup sugar (organic sugars are best)
- Zest of 1 lemon (I use organic from my orchard)
- 1 egg (I use organic free range duck goose or turkey eggs from my birds)
- Juice of 1 lemon (organic preferred)
- 1 1/2 tsp baking powder
- 3 cups ap unbleached (organic if available) flour, sifted
- 1/4 tsp salt (I use kosher or sea salt)
Citrusy Jelly Roll

Yummy jelly roll designed for tangerine juice but I changed it up to any of my citrus fruits
- Filling:
- 8 lg eggs
- 1 1/2 cups sifted cake flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 1/3 cups sugar divided
- 1 tsp vanilla
- Confectioners sugar to dust
- 2 cups whipping cream
- 6 Tb sugar
- 1/2 cup tangerine juice, (meyer lemon juice, orange juice, pineapple orange juice clementine juice, or blood orange juice)
- (or 1/2 cup sugar & 1/2 cup lime juice, grapefruit juice or lemon juice)
- Citrus zest for garnish
Tropical Orange Bread

This is my recipe using the fresh fruit from my orchard
- Glaze:
- 1/2 cup softened butter
- 1 cup sugar
- 2 eggs
- Orange zest from 1 orange
- 1/2 cup orange juice (fresh of course!)
- 2 cups AP flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup tropical fruit
- 1/2 cups nut pieces
- Juice of 1 orange
- 1/4 cup sugar
No Knead Bran Muffin Bread

- 2 Tb molasses
- 1 cup oil
- 1 tsp vanilla
- 4 eggs

- 2 cups whole wheat flour
- 8 1/2 cups AP flour
- 3 T yeast
- 2 Tb salt
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 cup vital wheat gluten

No knead Whole Wheat Sandwich Bread

A healthy & yummy whole wheat bread
- 3 cups lukewarm water
- 1/4 cup honey
- 1/4 cup butter/ coconut oil or a combo
- 1/4 cup rye flour
- 1/2 cup wheat germ
- 2 1/4 cups whole wheat flour
- 2 cups ap flour
- 3/4 cup spelt or emmer flour
- 1 Tb + 1 tsp salt
- 1 1/2 Tb yeast
- Ground Flax seed, citric acid & whole grain enhancer
- Extra flax seed for topping
