Black Bottom Tart W/ Pâté Sucre extra crust

Another delicious tart. See lemon mousse tart for pâté sucre extra recipe
- Filling:
- Pâté sucre prepared & baked.
- 1/2 cup cold milk
- 1/2 cup sugar
- 4 tsp cornstarch
- 1 1/2 cup hot scalded milk
- 3 egg yolks
- 2 tsp vanilla
- 1 1/2 oz choc chips
- 1 pkggelatin bloomed in 1/4 cup water
- 1 Tb rum
- 3 egg whites
- 1/2 tsp salt
- 1/4 tsp cream of tartar
- 1/4 cup sugar
- Topping:
- 2 cups heavy cream
- 2 Tb confectioners sugar
- Chocolate curls ( melted chocolate on waxed paper refrigerate & use peeler to rev curls)
No Knead Roasted Garlic Potato Bread

This is a really good bread that stays fresh for quite a while
- 1 head of garlic
- 6 cups of water
- 13 cups o flour (Ap, Artisian, European, Bread or a combo)
- 3 Tb yeast
- 3 Tb salt
- 3 tb sugar
- 2 cups mashed potatoes (use either fresh microwaved potatoes or instant, both are great)
Sweet Pie Dough

- 2 1/2 cups flour
- 1/4 cup + 2 Tb sugar
- 1/2 tsp salt
- 1/2 cup diced cold butter

Artisan Fruit & Nut Bread

A bread that I created after eating at Jon George's in new York
- Bread:
- Starter: 2 cups sourdough starter
- 1 cup water
- 1 cup white whole wheat flour
- Starter (above)
- 4 cup water
- 4 cups white whole wheat flour
- 8 cups bread flour
- 1-2 cups ap flour
- 3 Tb salt
- 3 1/2 T yeast
- 4 Tb sugar
- 4 Tb butter &/or coconut oil
- 4 cups mixed dried fruit
- 4 cup nuts (assorted)
No Knead Dilled Rye Bread

A dilly great rye bread. Excellent for sandwiches (think Reuben) toast & buttered with a meal, especially sauerbrat
- 8 cups water
- 5 1/2 cups rye flour
- 5 cups white whole wheat flour
- 5 cups AP flour
- 4 Tb coconut oil
- 3 Tb yeast
- 2 Tb salt
- 1/2 cup vital wheat gluten
- 4 Tb sugar
- 4 Tb fresh dill(1 Tb dry dill)
- Cornstarch wash
No Knead Pumpernickle date walnut bread

This is a wonderful dark European style loaf, oh so good!
- 6 cups water
- 3 Tbs yeast
- 3 Tbs salt
- 4 Tbs molasses
- 3 Tbs cocoa powder
- 4 tsp instant espresso powder
- 2 cups rye flour
- 3 Tb coconut oil
- 3 Tbs caramel color
- 2 cups wheat flour
- 9 cups AP flour
- 3 Tbs caraway seeds
- 2 cups dates &/ or raisins
- 2 cups walnut pieces
- Cornstarch wash
- Caraway seeds for topping
Chocolate Decadence Cookies

Rich & chocoltey good with the tang of fresh made candied orange peel
- Cookies:
- 1/4 cup ap flour
- 1/4 tsp baking powder
- 1/4 tsp salt
- 8 oz chocolate either bittersweet or semi sweet, chopped
- 2 Tb butter
- 2 eggs
- 1/2 cup sugar
- 1 tsp vanilla
- 2 1/2 cups toasted walnut pieces &/or pecan pieces
- 6 oz chocolate, bittersweet or semisweet, chopped
- 1/4 to 1/2 cup candied orange peel
- Candied Orange Peel:
- 2 oranges cutin quarters, peel removed
- 1 1/3 cup sugar
- 1/2 cup water
- 2 quart saucepan

- 3 1/4 cups lukewarm wate
- 4 cups ap flour
- 1 cup spelt or emmer flour
- (or use 5 cups ap flour)
