Chicken & Peppers in Vinegar Sauce

Heat oil in Dutch oven over high heat until it shimmers
- 3 tbs olive oil
- 8 bone in-skinless chicken thighs
- Kosher salt and freshly ground pepper
- 1 red bell pepper, stem and seeds removed, thinly sliced.
- 1 yellow pepper, stem and seeds removed, thinly sliced.
- 4 cloves garlic, chopped
- 1 tbs tomato paste
- 1 c balsmic vinegar
- 1 tbs honey
- 2 c chicken stock or broth
- 1/4 c chopped flat leave parsley
Pork Loin with White Wine-Mustard Sauce

Finely chop shallot. Pat pork dry and season with salt and pepper
- 1 medium shallot
- four 1/2-inch-thick boneless pork loin chops (about 1 pound total)
- 1 tablespoon vegetable oil
- 1/2 cup dry white wine
- 2 teaspoons whole-grain mustard
- 3/4 cup veal stock (6 fluid ounces)
- 1 teaspoon unsalted butter
Chicken Tortilla Soup

Put chicken carcass, celery, carrots ,onion, leeks, parsley and garlic in stockpot with 12 cups water
- Stock
- carcass of rotisserie chicken
- 1 rib celery
- 1 chopped onion
- 2 chopped carrots
- 2 chopped leeks
- fresh parsley
- cloves of garlic
- soup
- stock
- 2 TBS chili powder
- 1 can chopped tomatoes with green chiles
- 2 cups chopped, cooked chicken
- avocado
- queso fresco
- tortilla strips
Salmon with Sugar Snap Peas and Bacon

Place salmon skin side up on foil covered baking dish
- 2 lbs salmon filets
- 2 tbs olive oil
- 1/2 tsp sea salt
- 3 slices thick-cut bacon, cut into slivers
- 1/2 onion minced
- 1/2 c white wine
- 1 lb sugar snap peas, trimmed
- 1 tbs butter
- 1/4 c chopped fresh mint
Lemon Cake

combine all ingredients and bake 350 for 25 minutes
- 1 pkg Betty Crocker lemon cake mix
- 1 pkg instant vanilla pudding mix
- 4 eggs
- 3/4 c water
- 2/3 c veg oil
- Frosting
- 2 c powdered sugar
- 2 tsp veg oil
- 1/4 tsp vanilla
- 1/4 c lemon juice
Broccoli Cheddar Soup

In a medium pot, melt the 3 tablespoons butter over medium-high heat
- 3 tablespoons unsalted butter, plus 2 tablespoons cold unsalted butter, cut into pieces
- 1 cup yellow onions or sliced leeks (white parts only, well rinsed)
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground white pepper
- Pinch nutmeg
- 1/2 teaspoon minced garlic
- 1/2 teaspoon chopped fresh thyme leaves
- 3 tablespoons all-purpose flour
- 3 cups chicken stock or canned, low-sodium chicken broth
- 1 (16-ounce) package frozen broccoli, thawed and separated
- 1/2 cup heavy cream
- 1 1/4 cups shredded medium Cheddar
- Croutons, for garnish, recipe follows
Creamy Dill Sauce

- 1/4 c non fat plain yogurt
- 1 tbs lemon juice
- 1 tbs fresh dill
- ground pepper to taste
