Portobello Parmesan

Preheat the oven to 350 degrees F
- 1 tbsp EVOO, plus more for the dish
- 3 portobello mushroom caps
- 1/4 tsp red pepper flakes
- 3 cloves garlic, smashed
- 1 28 oz. can diced tomatoes
- 4 fresh basil leaves
- Kosher salt and freshly ground pepper
- 2 c panko
- 1 c grated parmesan cheese
- 2 tbsp chopped fresh parsley
- 4 large eggs
- 1 c all purpose flour
- Peanut oil, for frying
- 4 oz. buffalo mozzarella cheese, sliced
Chocolatiest Crinkles

Melt the chocolate over a double boiler
- 5 oz. bittersweet or semisweet chocolate, chopped
- 3/4 c plus 2 tbsp all purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 c unsalted butter at room temperature
- 1/2 c granulated sugar
- 1/2 c packed dark brown sugar
- 1 large egg
- 1 1/2 tsp vanilla extract
- 1/2 c confectioners' sugar
Four Cheese Scalloped Potatoes

Position a rack in the upper third of the oven and preheat the oven to 425 degrees F
- 1 1/2 tbsp unsalted butter cut into pieces, plus more for brushing
- 1/2 clove garlic
- 1/3 c shredded mozzarella cheese
- 1/3 c shredded asiago cheese
- 1/3 c shredded raclette or comete cheese
- 2 lbs russet potatoes, peeled and sliced, 1/8" thick
- Kosher salt and freshly ground pepper
- 2 c heavy cream
- 1/4 tsp nutmeg
- 4 bay leaves
- 1/4 c parmesan cheese
Chicken Mango Curry

Stir together the first nine ingredients in the slow cooker
- 1 14 oz can coconut milk
- 3 garlic cloves, minced
- 2 " section of fresh ginger, peeled and minced
- 1 tbsp tomato paste
- 1 1/2 tbsp curry powder
- 1/2 tsp cinnamon
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 tsp cayenne
- 1 1/2 lbs chicken thighs, cut into 1" pieces
- 1 medium sweet potato, cut into 1/2" pieces
- 1 yellow onion, chopped
- 1 red pepper, thinly sliced
- 1 orange pepper, thinly sliced
- 2 c mango cubes
- 1/2 c unsalted roasted cashews
- Juice of 1/2 lime
- 1/2 c chopped cilantro
Steamed Broccoli with Peanut Sauce

Cook the broccoli according to the package directions
- 1 ten oz package of microwave broccoli florets
- 3 tbsp creamy peanut butter
- 2 tbsp water
- 1 tbsp rice vinegar
- 1 tbsp reduced sodium soy sauce
- 1 1/2 tsp toasted sesame seeds
Pumpkin Chocolate Chip Brownies

Preheat oven to 350˚F. Line an 11″- x 7″-inch pan with parchment paper
- 1/2 cup pumpkin puree
- 1 whole egg
- 2 egg whites
- 1 tbsp vegetable or canola oil
- 1 cup flour
- 1 tsp baking powder
- 1 tsp unsweetened cocoa powder
- 1/2 tsp ground cinnamon
- 1/2 tsp ground allspice
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 2/3 cup brown sugar, packed
- 1/2 cup semisweet chocolate chips
Banana Bread

- 1/4 c flaxseed meal
- 1 tsp baking powder
- 1/2 tsp salt

- 1/2 c plain low fat yogurt
