Cheesy Twice-Baked Potatoes

Preheat the oven to 425 degrees F
- 4 russet potatoes, scrubbed
- 4 tbsp unsalted butter
- 1 clove garlic, minced
- 1 shallot, minced
- 1/2 c sour cream
- 2 tbsp minced fresh chives, plus more for topping
- 2 c grated white cheddar cheese
- Kosher salt and freshly ground black pepper
Sour Cream Coffee Cake

Mix 1 c brown sugar, 1 c finely chopped nuts and 1 1/2 tsp cinnamon

Chicken and Cheese Enchiladas

Preheat the broiler. Slice half of the onion into thin rings and set aside
- 1 small red onion, halved
- 1 1/2 pounds tomatillos, husked and rinsed
- 1 to 2 serrano chile peppers, stemmed and seeded
- 1/2 cup low-sodium chicken broth
- Kosher salt
- Pinch of sugar
- 8 corn tortillas
- 3 cups shredded rotisserie chicken
- 2 1/2 cups shredded mozzarella and/or Monterey Jack cheese
- 1/3 cup fresh cilantro
- 2 tablespoons extra-virgin olive oil, plus more for greasing
- 3/4 cup crumbled queso fresco or feta cheese
Rigatoni with Sun Dried Tomato and Fennel Sauce

Bring a large pot of well salted water to a boil
- Kosher salt
- 2 tbsp EVOO
- 1 c chopped fennel
- 2 medium cloves garlic, coarsely chopped
- 1 c heavy cream
- 1 c chicken broth
- 1/3 c dried, sun dried tomatoes, coarsely chopped
- 1/4 tsp crushed red pepper flakes
- 1 tbsp pernod
- 1 lb dried rigatoni
Grilled Balsamic Chicken Salad with Blue Cheese Toasts

Heat oven to 350 degrees F
- Chicken and Salad:
- Cooking Spray
- 2 skinless, boneless, chicken breasts
- 1/4 tsp freshly ground pepper
- 1/8 tsp kosher salt
- 3 tbsp pecan halves
- 1 tbsp light brown sugar
- 1 tsp butter
- 1/4 tsp hot sauce
- 4 tsp EVOO
- 1 1/2 tsp balsamic vinegar
- 1/2 tsp Dijon mustard
- 1/2 tsp minced garlic
- 4 c arugula leaves or mixed salad greens
- 1/2 c fresh raspberries
- 1/4 c fresh blackberries
- 2 oz. crumbled feta cheese
- Blue Cheese Toasts:
- 2 oz. baguette cut into slices
- Cooking spray
- Kosher salt
- 1 oz blue cheese
- 1 tsp freshly minced chives or green onions

Chicken Stuffed with Smoked Mozzarella, Roasted Tomatoes and Broccoli Rabe over Potatoes with Marsal

To roast vegetables, preheat oven to 400 degrees F
- 8 Roma plum tomatoes, halved lengthwise and seeds removed
- 4 bunches broccoli rabe (rapini), divided into 8 sections
- Salt and freshly ground black pepper
- 1/2 cup plus 2 tablespoons olive oil, divided plus more for coating potatoes
- 2 finely diced shallots, or 1 white onion, finely diced
- 1 (750-ml) bottle Marsala
- 1 cup vegetable stock
- 1 tablespoon freshly chopped thyme leaves
- 8 (6-ounce) boneless chicken breasts, skin on
- 8 ounces smoked mozzarella, sliced
- 6 to 8 white potatoes, scrubbed and cut into chunks
- 1/2 cup unsalted butter (1 stick)
- 1/2 bunch fresh chives, chopped
Chocolate Chocolate Chunk Cookies

Position a rack in the middle of the oven and preheat the oven to 350 degrees F
- 11 oz. bittersweet or semisweet chocolate, chopped
- 3 tbsp unsalted butter
- 1 tsp instant espresso powder
- 1/2 c packed dark brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/3 c all purpose flour
- 1/4 tsp baking powder
- Pinch of salt
- 1 c chopped toasted hazelnuts and/or pecans
- 1/4 c cocoa nibs
Spicy Corn Salad

Blanch corn in boiling water, salted for 3 mins
- Corn, Salt, Sugar, Onion, Red pepper, Chilis, Jalapeno, Cider vinegar, mustard seed, black pepper, cayenne pepper, tumeric.

Curried Pumpkin-Apple Soup

Melt the butter in a medium-size soup pot
- 2 tablespoons butter
- 1 cup chopped onion
- 1 cup chopped celery
- 1/2 large apple, peeled, cored, and chopped
- 2 teaspoons mild curry powder
- 3 cups chicken broth
- 1 1/2 cups solidly packed pumpkin mash or canned pumpkin
- 1/4 teaspoon salt, plus more to taste
- 1 whole bay leaf
- 1/3 cup heavy cream
- 2 to 3 tablespoons honey or maple syrup
- Sour cream and chives, for garnish (optional)
