Chocolate Icebox Cake

In a glass measuring cup or bowl, combine the espresso with 1 tbsp sugar
- 4 tsp espresso
- 1/4 c plus 2 tbsp sugar
- 20 ladyfinger cookies
- 1 0.25 oz pkg powdered gelatin
- 1 10 oz. pkg bittersweet chocolate chips
- 4 c heavy cream
- 6 large egg whites
- Shaved chocolate, for serving
Turkey Larb

Make the dressing: in a small bowl, whisk together all of the ingredients
- For the Dressing:
- 1/3 c fresh lime juice
- 1-3 tbsp fresh lemon juice
- 2 tbsp fish sauce
- 2 tbsp honey
- Larb:
- 2 tbsp vegetable oil
- 1/2 medium red onion, diced
- 3 small shallots, thinly sliced
- 1 4" piece lemongrass, minced
- 1 thai chile, stemmed and thinly sliced
- Kosher salt
- 1 1/2 lbs ground turkey
- 1/2 c chopped fresh mint leaves
- Freshly ground black pepper
- 1 head butter lettuce, leaves separated
- Sticky white rice, for serving
Mozzarella nd Spinach BLTs

Working in batches, cook the bacon in a 12" skillet over medium heat until crisp, about 8 minutes per batch
- 12 slices thick cut bacon
- 1 medium clove garlic, finely chopped
- 3 cups lightly packed baby spinach leaves
- Kosher salt and freshly ground black pepper
- 8 slices country style white bread
- 8 oz. fresh mozzarella, sliced
- 1 large tomato, cored and thinly sliced
- 1 tbsp EVOO
Cheese & Herb Potato Fans

Preheat oven to 425 degrees F
- 8 medium potatoes
- 1/2 c butter, melted
- 2 tsp salt
- 1/2 tsp pepper
- 2/3 c shredded cheddar cheese
- 1/3 c shredded parm
- 2 tbsp minced fresh chives
- 2 tbsp minced fresh sage
- 2 tbsp minced fresh thyme
Pumpkin Pancakes

In a large bowl, combine the pancake mix, brown sugar, and pumpkin pie spice
- 2 2 2 cups of pancake mix
- 3 3 3 tbsp dark brown sugar
- 2 1/2 2 1/2 1/2 tsp pumpkin pie spice
- 1 1/2 1 1/2 1/2 c milk
- 1 1 1 cup canned pumpkin puree
- 1 1 1 egg
- 1 1 1 tsp vanilla
- 1 1 1 tbsp vegetable oil
Pasta Primavera

Bring a large pot of salted water to a boil
- Kosher salt
- 12 ounces fusilli or other corkscrew pasta
- 1/2 pound sugar snap peas, halved lengthwise, or broccoli florets (or a combination)
- 2 carrots, shredded
- 1 yellow bell pepper, cut into thin strips
- 1/4 cup extra-virgin olive oil, plus more for drizzling
- 4 cloves garlic, thinly sliced
- 1 pint cherry tomatoes, halved
- 1/4 to 1/2 teaspoon red pepper flakes
- 1/2 cup roughly chopped fresh mint
- 1/2 cup grated parmesan cheese
- 4 ounces goat cheese, crumbled
Wild Rice Pilaf with Mushrooms and Pecans

Cook the wild rice according to package directions; transfer to a large bowl
- 3 oz. wild rice
- 1/2 lb. orzo pasta
- 2 tbsp butter
- 1/2 lb. cremini mushrooms, sliced
- 1/3 c pecans, chopped
- 2 tbsp chopped fresh sage
- 1 c frozen peas, thawed
Katherine Hepburn Brownies

Position a rack in the middle of the oven and preheat to 325 degrees F
- 1/2 c unsalted butter
- 2 oz. unsweetened chocolate, chopped
- 1 c sugar
- 2 large eggs, lightly beaten
- 1/2 tsp vanilla extract
- 1/4 c all purpose flour
- 1/4 tsp salt
- 1 c walnuts, chopped

Spring Vegetable Ragout with Fresh Pasta

- 1 small clove garlic, minced
- Freshly ground black pepper
- 3 cups spring vegetables
- 1/2 c shelled peas or peeled fava beans
- 1/3 c loosely packed pea shoots or watercress sprigs
- 1/4 c loosely packed chopped fresh herbs
- 4 tbsp cold unsalted butter cut into 1/2" pieces
- 1 1/2 tsp freshly grated lemon zest
- Freshly grated parmesan cheese
