Fennel, Apple and Walnut Salad with Citrus Vinaigrette

For the dressing, mix cider vinegar, oil, mustard, orange juice, honey and garlic
- Apple cider vinegar dressing
- 2 tbsp orange juice
- 2 tbsp honey
- 1 clove garlic, minced
- 4 cups curly endive, torn
- 3 cups thinly sliced fennel bulbs
- 1 cup cubed apple or pear
- 1.2 cup coarsely chopped walnuts, toasted
- 1/2 cup thinly sliced red onion
- 1/2 cup crumbled blue cheese, feta or goat cheese
- Sea salt
- Freshly ground black pepper
Savory Breakfast Waffle Sandwich

Assemble sandwich
- 1 egg, scrambled
- 1 tbsp butter
- 2 slices tomato
- 1/4 sliced avocado
- 2 whole grain waffles
Pasta Primavera

Bring a large pot of salted water to a boil
- Kosher salt
- 12 ounces fusilli or other corkscrew pasta
- 1/2 pound sugar snap peas, halved lengthwise, or broccoli florets (or a combination)
- 2 carrots, shredded
- 1 yellow bell pepper, cut into thin strips
- 1/4 cup extra-virgin olive oil, plus more for drizzling
- 4 cloves garlic, thinly sliced
- 1 pint cherry tomatoes, halved
- 1/4 to 1/2 teaspoon red pepper flakes
- 1/2 cup roughly chopped fresh mint
- 1/2 cup grated parmesan cheese
- 4 ounces goat cheese, crumbled
Eggplant Salad with Israeli Couscous and Basil

In a small saucepan, combine couscous, 1 c water, and 1/2 tsp salt
- 3/4 c Israeli couscous
- Coarse salt and ground pepper
- 3 tbsp olive oil
- 1 lb eggplants, cut into 1/2" chunks
- 3 shallots, trimmed and quartered
- 2 tsp red wine vinegar
- 1/3 c lightly packed fresh basil, torn
Poppy Seed-Chicken Pitas

Cover the chicken with cold water in a saucepan and add 1 teaspoon salt
- 3 skin-on, bone-in chicken breasts (about 2 pounds)
- Kosher salt
- 1 large orange
- 1/2 cup mayonnaise
- 1/3 cup sour cream or low-fat Greek yogurt
- 1 tablespoon dijon mustard
- 1 stalk celery, chopped
- 1/2 cup chopped pecans, almonds or walnuts, toasted
- 1/4 cup chopped fresh chives
- 1 1/2 tablespoons poppy seeds
- Freshly ground pepper
- 1/2 cup dried apricots, chopped (optional)

- 1 large fresh rosemary sprig

- 1 c chopped onion
- 3 oz. panchetta or bacon, chopped

- 1 tsp freshly grated nutmeg
- 1/2 tsp ground ginger

- 8 large egg yolks
- 1 c granulated sugar
- 1/2 c whole milk
- 2 c canned pure pumpkin

Grilled Mahi Mahi with Tomatillo Sauce

Prepare a charcoal or gas frill for direct-heat cooking over high heat, or preheat the broiler
- 3-4 tomatillos, about 5 oz. total weight
- 4 green onions
- 1 tbsp plus 1 tsp extra virgin olive oil
- 1 small clove garlic, finely chopped
- 1/2 small avocado, peeled and coarsely chopped
- 1/3 c lightly packed chopped fresh cilantro leaves and tender stems
- 1 tbsp fresh lime juice
- 1 tsp honey
- 1 tsp finely chopped jalepeno chile, or to taste
- Kosher salt
- 4 mahi mahi fillets, 6-7 oz. each
- Freshly ground black pepper
