Autumn Potato Gratin

Preheat the oven to 400 degrees F
- 4 pounds mixed baby potatoes, such as Red Bliss, Peruvian Purples, and Fingerlings
- 2 cups heavy cream, plus some to cover
- 4 tablespoons butter (1/2 stick)
- 2 sprigs each fresh thyme, sage, and rosemary
- 2 garlic cloves, cracked
- Salt and pepper
- 1/2 cup grated Parmesan

- 4 medium poblano chile peppers
- 3 medium yukon gold potatoes, peeled and cut into 1/2" pieces
- Kosher salt
- 2 tbsp EVOO
- 1 1/2 tbsp finely chopped cilantro
- 1 1/2 tbsp finely chopped parsley
- 2 tbsp unsalted butter
- 1 large onion, halved and thinly sliced
- 12 oz. cremini or button mushrooms, trimmed and thinly sliced
- 1 clove garlic, minced
- 1/2 c sour cream
- Juice of 2 limes
- Freshly ground black pepper
- Corn tortillas and assorted toppings (Cotija cheese, cilantro)
Asian Marinated Pork Salad

Make the dressing: Finely chop 1/4 c cilantro and place in a medium bowl
- 3/4 c fresh cilantro
- 2 limes
- 2 tbsp low sodium soy sauce
- 1 tbsp honey
- 1 tbsp grated fresh ginger
- 4 scallions, sliced
- 1 1 1/4 lb pork tenderloin
- 2 plums or nectarines, each cut into 6 wedges
- 3 tbsp canola oil
- 1 14 oz. pkg coleslaw mix

Baked Pasta with Roasted Wild Mushrooms in a Creamy Thyme Sauce

Place a rack in the middle of the oven and preheat it to 425 degrees F
- 1 pound portobello mushrooms, stems trimmed, sliced or chopped into 1-inch pieces (see Note)
- 1 pound cremini mushrooms, stems trimmed, sliced or chopped into 1-inch pieces (see Note)
- 8 ounces shiitake mushrooms, stems trimmed, sliced or chopped into 1-inch pieces (see Note)
- 1 large sweet yellow onion, diced
- 1/4 cup plus 2 tablespoons olive oil, divided
- 2 tablespoons chopped fresh thyme or 2 teaspoons dried
- 4 cloves garlic, minced
- Salt
- Freshly ground black pepper
- 1 cup heavy cream
- 1 pound shaped pasta, like penne, farfalle (bows), rotelle (little corkscrew shapes), conchiglie (shells), fusilli (spirals), or ziti

Beef Tenderloin with Parmesan-Herb Stuffing

Preheat oven to 425 degrees F
- 2 tbsp butter
- 1 cup sliced, fresh cremini mushrooms
- 1/2 cup chopped shallots
- 2 tbsp snipped fresh parsley
- 1 tsp snipped fresh rosemary
- 1 tsp snipped fresh thyme
- 2 cloves garlic, minced
- 4 oz. prosciutto, cut into 1/4" pieces
- 1 cup plain croutons, coarsely crumbled
- 1/2 cup grated parmesan cheese
- Ground black pepper
- 1 4-5 lb center cut beef tenderloin roast
- Salt
- 3 tbsp olive oil
- 1 medium onion, cut into quarters
- 2 fresh rosemary sprigs
- 1 tbsp fresh thyme leaves
- 4 cloves garlic
- 1 tbsp tomato paste
- 1/2 cup dry red wine
- 3 cups lower sodium beef broth
Spicy Mint Beef

In a large skillet, heat the oil over medium high heat
- 3 tbsp vegetable oil
- 4 cloves garlic, minced
- 2-3 thai chilis, stemmed and very thinly sliced
- 1 lb flank steak, very thinly sliced
- 3 medium shallots, thinly sliced
- 1 red pepper, cut into 1/8" thick slices
- 2 tbsp soy sauce
- 2 tbsp sweet soy sauce
- 1 tbsp chili paste
- 1 1/2 c chopped fresh thai basil leaves
- 1 c whole fresh mint leaves
- White rice for serving
Fresh Fettuccine with Roasted Chicken and Broccoli Rabe

Bring a large pot of salted water to a boil
- Salt
- 1 lb. broccoli rabe, cut into 3" pieces
- 1 package fresh fettuccine
- 1 14 oz. can chicken broth
- 1/4 c fresh lemon juice
- 3 c shredded roasted chicken
- 3/4 c freshly grated parmesan cheese
- 1/2 c toasted pine nuts
- 2 tbsp chopped fresh flat leaf parsley
- 2 tbsp olive oil
- 1 tbsp lemon zest
- Freshly ground black pepper
Tomato Herb Butter

Heat 1 tbsp oil in a saute pan over medium heat
- 1/4 c EVOO
- 2 garlic cloves, minced
- 3 small shallots, minced
- 1 pt. cherry tomatoes, halved
- 1/4 c dry white wine
- 1/2 tsp kosher salt
- 1/4 tsp crushed red pepper
- 1/4 c unsalted butter
- 3 tbsp finely chopped herbs (cilantro, parsley, green onion)
- Serve with sauteed tilapia fillets (seasoned with salt and pepper), and sauteed sweet potatoes and beans (cubed, seasoned with salt and pepper). Top with avocado yogurt sauce (greek yogurt; ripe, mashed avocado, lemon juice, salt and pepper)
Sausage Pizza Slab Pie

Preheat oven to 375 degrees F
- 3 13.8 oz. pkg refrigerated pizza dough
- 8 oz. Italian sausage, cooked and drained
- 2 cups shredded fresh spinach leaves
- 1 cup canned pizza sauce or bottled pizza sauce
- 1 cup quartered artichoke hearts
- 1/3 cup slivered red onion
- 2 cups shredded Italian blend cheese
- 1 cup shredded Parmesan cheese
Latke Reuben

Position racks in the upper and lower thirds of the oven; preheat broiler
- 1 lb potatoes, peeled and shredded
- 1 onion, shredded
- 2 eggs
- 1/4 c matzo meal
- 1/4 tsp baking powder
- 1 tsp salt
- 1 tsp pepper
- 2 tbsp butter
- 1/2 lb deli style sliced corned beef
- 1/2 c well drained sauerkraut
- 2 slices swiss cheese
- 2 tbsp russian dressing
