Curried Turkey & Israeli Couscous Salad with Dried Cranberries

In a 1 qt saucepan, bring the orange juice to a boil over medium high heat
- 1/4 c freshly squeezed orange juice
- 1/2 c dried cranberries
- Kosher salt
- 1 c Israeli couscous
- 6 oz. skinless, roast turkey meat cut into medium dice
- 1/2 c toasted almonds, chopped
- 2 medium celery stalks, finely chopped
- 2 scallions, thinly sliced
- 3 tbsp EVOO
- 4 tsp white wine vinegar
- 1 1/2 tsp curry powder
- Freshly ground black pepper
Halibut with Citrus Fennel Relish

Sprinkle fish with 1/2 tsp salt and 1/2 tsp pepper
- 4 6 oz. halibut fillets
- 3/4 tsp salt, divided
- 3/4 tsp freshly ground black pepper, divided
- 2 tbsp extra virgin olive oil, divided
- 1 1/4 c shaved fennel bulbs
- 1 1/4 c coarsely chopped orange sections
- 1 tbsp chopped fennel fronds
Pineapple Marzipan Cupcakes

Preheat oven to 350 degrees
- Topping:
- 3/4 c butter, softened
- 1 pkg marzipan, crumbled
- 1/2 c sugar
- 1/4 c packed brown sugar
- 3 eggs
- 1 tsp vanilla extract
- 2 c all purpose flour
- 2 tsp baking powder
- 1 can crushed pineapple, drained
- 8 oz semisweet chocolate chips
- 2 tbsp butter
- Pineapple tidbits, patted dry
Blackberry Fool

Set a sieve over a bowl. Push the blackberries and chipotle through the sieve
- 1 1/2 c fresh blackberries
- 1 chipotle chile, stemmed
- 3 tbsp light brown sugar
- 1 tsp fresh lime juice
- 1 c heavy cream
- 1 1/2 tbsp confectioners' sugar
- 1/2 tsp pure vanilla extract
Bistecca alla Puttanesca

Heat grill or grill pan to medium high
- 4 flatiron steaks or small sirloin steaks
- 2 large cloves garlic, halved
- 2 tbsp EVOO
- Salt and pepper
- 2 tbsp butter, softened
- 2 tbsp anchovy paste
- 1 pt cherry tomatoes, halved
- 1/4 c pitted black or kalamata olives, halved
- 5 caper berries, drained and sliced
- 1/2 small red onion, chopped
- 1/2 c coarsely chopped flat leaf parsley

In a food processor, pulse the flour with 1 tsp salt
- 2 1/3 c all purpose flour
- Kosher salt
- 3 large eggs, lightly beaten
- 3 tbsp unsalted butter at room temperature
- 2 tbsp smoked butter at room temperature or unsalted butter
- 3/4 c warm chicken stock
- 1/2 c freshly grated parmigiano reggiano cheese
- 2 tbsp chipped fennel fronds
- 2 tbsp chopped parsley
- 2 tbsp minced chives
- Freshly ground pepper
- EVOO for drizzling
- Pinch of tandoori masala or curry powder
