Mushroom & Spinach Mini Pizzas

Preheat oven to 350 degrees F
- 4 sandwich thin rolls, separated
- 5 sundried tomatoes, packed in oil, 1 tbsp plus 2 tsp oil
- 1 c fresh ricotta cheese
- 8 oz. mushrooms, chopped
- 1 c fresh baby spinach leaves, washed and dried
- Kosher salt, to taste
- Freshly ground black pepper, to taste
Meatloaf Muffins with Barbecue Sauce

Preheat oven to 450 degrees F
- 1 2/3 to 1 3/4 pounds ground sirloin
- 1 medium onion, cut into chunks
- 2 ribs celery from the heart of the stalk, cut into 2-inch pieces
- 1 green bell pepper
- 1 large egg plus a splash of milk, beaten
- 1 cup plain bread crumbs
- 2 tablespoons grill seasoning (recommended: Montreal Steak Seasoning by McCormick)
- 1 cup smoky barbecue sauce
- 1/2 cup tomato salsa
- 1 tablespoon Worcestershire sauce
- Vegetable oil or extra-virgin olive oil

BLT Sandwich Salad

Preheat the oven to 250 degrees F
- Salad:
- 1 head romaine lettuce, thinly sliced
- 1/2 c chopped red onion
- 2 roma tomatoes, seeded and chopped
- 4 slices white bread
- 1 tbsp unsalted butter
- Bacon:
- 1/4 c lightly brown sugar
- 1 tsp hungarian paprika
- Grated zest of 1 lemon
- 1 tsp black peppercorns, crushed
- 6 strips center cut bacon
- 6 sprigs fresh thyme
- Dressing:
- 1/2 c mayonnaise
- 1-2 tbsp maple syrup
- 4 tsp whole grained mustard
- 1 tbsp fresh lemon juice
Minestrone Soup

Heat the olive oil in a large pot over medium high heat
- 2 tbsp EVOO
- 1 large onion, diced
- 4 cloves garlic, minced
- 2 stalks celery, diced
- 1 large carrot, diced
- 1/3 lb green beans, trimmed and cut into 1/2" pieces
- 1 tsp dried oregano
- 1 tsp dried basil
- Kosher salt and freshly ground pepper
- 1 28 oz. can no salt added diced tomatoes
- 1 14 oz. can crushed tomatoes
- 6 c low sodium chicken broth
- 1 15 oz. can low sodium kidney beans, drained and rinsed
- 1/2 c elbow pasta
- 1/3 c finely grated parmesan cheese
- 2 tbsp chopped fresh basil
Lucious Chocolate Layer Cake

Position a rack in the middle of the oven and preheat the oven to 350 degrees F
- Cake:
- 1/2 c natural cocoa powder
- 1/2 c boiling water
- 2 1/4 c sifted all purpose flour
- 1 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 c unsalted butter at room temperature
- 1 3/4 c sugar
- 1 tsp pure vanilla extract
- 2 large eggs
- 1 1/3 c sour cream
- Frosting:
- 6 oz. semisweet chocolate, chopped
- 2 tbsp water
- 1/2 c sugar
- 4 large egg yolks
- 3/4 tsp pure vanilla extract
- 1 c unsalted butter cut into 16 pieces, at room temperature
Crockpot Shredded Pork Loin Roast

- One 5-lb pork loin roast
- Onion powder, to taste
- Garlic powder, to taste
- 1 bottle BBQ sauce

French Fry Deluxe Salad

- 3 c frozen curly french fries
- 4 strips of bacon
- 1 tbsp yellow mustard
- 3 tbsp chopped dill pickle, plus a splash of juice from the jar
- 1 1/2 tbsp ketchup
- 3 tbsp mayonnaise
- 1 1/2 tbsp malt vinegar
- 1/2 tsp sugar
- Kosher salt and freshly ground pepper
- 1 c grape tomatoes, halved
- 1/4 c thinly sliced red onion
- 2 romaine hearts, torn
- 1/4 c shredded sharp cheddar cheese
- Toasted sesame seeds, for topping

- 1 lb refrigerated cheese agnolotti or ravioli
- 1/4 c finely grated parmesan cheese

Pomegranate Viniagrette

- 3 tbsp pomegranate molasses
- 2 tbsp red wine vinegar
- 1 tbsp dijon mustard
- 1 tbsp honey
- Kosher salt and freshly ground pepper
