Basil Pesto

In a blender, pulse the basil, pine nuts, garlic, 1/2 tsp salt and 1/4 tsp pepper until finely chopped
- 2 c packed fresh basil leaves
- 1/4 c toasted pine nuts
- 1 garlic clove
- 1/2 tsp salt, plus more to taste
- 1/4 tsp freshly ground black pepper, plus more to taste
- 2/3 About 2/3 c extra virgin olive oil
- 1/2 c freshly grated parmesan cheese
Ham Sandwiches

Melt butter and add flour to make roux
- 2 tbsp unsalted butter
- 3 tbsp flour
- 2 c hot milk
- Salt
- Nutmeg - pinch
- 12 oz. Gruyere grated, or Swiss
- 1/2 c parmesan cheese
- White bread, toasted
- Dijon mustard
- Virginia ham
Fish Tacos with Fresh Salsa

Make the salsa: mix the tomatillo, tomato, onion, cilantro, lime juice and jalapeno in a bowl and season with salt
- 1 large tomatillo, husked, rinsed and chopped
- 1 medium tomato, chopped
- 1/2 small red onion, finely chopped
- 3 tbsp chopped fresh cilantro
- 2 tbsp fresh lime juice, plus lime wedges for serving
- 1/2 jalapeno pepper, minced
- Kosher salt
- Vegetable oil, for frying
- 1 1/4 lbs catfish fillets, cut into 1" pieces
- Freshly ground pepper
- 1/4 c instant flour or cornstarch
- 8 corn tortillas, warmed
- 1 c shredded iceberg lettuce
Roasted Cauliflower Risotto

Position the racks in the upper and lower thirds of the oven and preheat to 475 degrees F
- 1 head cauliflower, florets cut into 1/2" pieces, stems chopped
- 3 tbsp olive oil
- Kosher salt and freshly ground pepper
- 1/4 c sliced almonds
- 1/2 medium onion, finely chopped
- 1 1/2 c arborio
- 1 clove garlic, minced
- 1/2 c dry white wine
- 3 c low sodium chicken broth
- 2 tbsp unsalted butter
- 4 oz. fontina cheese, grated
- 1/2 c roughly chopped fresh parsley
Salted Caramel Brownies

Preheat the oven to 350 degrees F
- 1/2 lb unsalted butter
- 8 oz plus 6 oz. semisweet chocolate chips
- 3 oz. unsweetened chocolate
- 3 large eggs
- 1 1/2 tbsp instant coffee
- 1 tbsp pure vanilla extract
- 1 cup plus 2 tbsp sugar
- 1/2 cup plus 2 tbsp all purpose flour divided
- 1 1/2 tsp baking powder
- 1/2 tsp kosher salt
- 5-6 oz. caramel sauce
- 2-3 tsp flaked sea salt
Green Bean Casserole

Stir the soup, milk, soy sauce, black pepper, beans and 1 1/3 cups onions in a 3-quart casserole
- 2 cans (10 3/4 ounces each) Campbell's® Condensed Cream of Mushroom Soup (Regular or 98% Fat Free)
- 1 cup milk
- 2 teaspoons soy sauce
- 1/4 teaspoon ground black pepper
- 8 cups cooked cut green beans
- 2 2/3 cups French's® French Fried Onions
Double Decker Chipotle Chicken Clubs

In a large skillet, cook the bacon until browned but not crisp, about 8 minutes
- 6 thick cut slices of bacon
- 1 1/4 c mayonnaise
- 5 cloves garlic, finely chopped
- 2 tbsp fresh lemon juice
- 1 canned chipotle chile packed in adobo sauce, chopped plus 2 tsp sauce
- 1/4 c cilantro leaves, chopped
- 1/2 rotisserie chicken, skin and bones discarded and meat shredded
- 12 slices white bread, crusts removed and toasted
- 1/2 bunch watercress, trimmed
- 1 hass avocado, halved, pitted and thinly sliced lengthwise
Penne with Roasted Asparagus and Balsamic Butter

Heat the oven to 400°. Snap the tough ends off the asparagus and discard them
- 1 pound asparagus
- 1 tablespoon olive oil
- 2 teaspoons salt
- 1/2 teaspoon fresh-ground black pepper
- 1/2 cup plus 2 tablespoons balsamic vinegar
- 1/2 teaspoon brown sugar
- 1 pound penne
- 1/4 pound butter, cut into pieces
- 1/3 cup grated Parmesan cheese, plus more for serving
Parker House Rolls

In a stand mixer fitted with the dough hook, mix the yeast, water and 1 tbsp sugar
- One 1/4 oz package active dry yeast
- 1/2 c warm water
- 1/2 c sugar
- 2 sticks melted butter, unsalted, cooled
- 2 c milk at room temp
- 2 large eggs, lightly beaten
- 1 tbsp kosher salt
- 7 1/2-8 oz all purpose flour
- Flaky sea salt for for sprinkling
