Heat the oven to 350 degrees F
- 2 ripe plum tomatoes, sliced 1/2" thick

- Salt and pepper
- EVOO for drizzling
- 1/4 lb pancetta or bacon, finely diced
- 1 lb. ground beef sirloin
- 2 large garlic cloves minced or grated
- Handful flat leaf parsley, finely chopped
- 1/8 lb spicy salami, coarsely chopped
- 1/4 lb ham
- 4 thick deli slices of provolone cheese
- 4 crusty rolls, split
- Handful of arugula leaves
- Handful of basil leaves, torn
- Thinly sliced red onion

For brine, in a large stockpot combine apple cider, ginger, salt, brown sugar, bay leaves, orange peel, peppercorns...
- 5 1/2 cups apple cider
- 1 cup finely chopped fresh ginger
- 3/4 cup kosher salt
- 1/2 cup packed brown sugar
- 3 bay leaves
- 2 2x1 inch strips orange peel
- 1 tbsp whole black peppercorns
- 4 whole cloves
- 12 cups ice water
- 1 8-10 lb frozen turkey
- 1 recipe cider sauce
- 4 cups apple cider
- 2 tbsp cold water
- 2 tsp cornstarch
- 1/4 cup butter
- 1 tsp grated fresh ginger
- 1 tsp finely shredded orange peel
Triple Onion Sour Cream Dip

Set a strainer over a heatproof bowl
- 3 c canola oil, for frying
- 3 shallots, very thinly sliced (1 cup)
- 2 scallions, thinly sliced (1 cup)
- 1 onion, very thinly sliced (1.5 cups)
- 2 c light sour cream or plain Greek yogurt
- Salt and freshly ground pepper
Italian Sausage Lasagna Rolls

- 1 tbsp EVOO
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 1 can crushed tomatoes (28 oz)
- 1 can tomato paste
- 1 tsp each dried basil, marjoram, oregano, parsley and thyme
- 1/2 tsp pepper
- 1/4 tsp salt
- 10 uncooked lasagna noodles
- 1 package mild italian sausage
- 1 pkg fresh baby spinach
- 1 pkg cream cheese, softened
- 2 c shredded mozzarella

Cardamom-Blackberry Linzer Cookies

- 2 c all purpose flour
- 1 c salted roasted almonds
- 2-3 tsp ground cardamom
- 1/4 tsp salt
- 1 c unsalted butter, softened

- 1 egg
- 1 jar seedless blackberry spreadable fruit
