Blackberry Fool

Ingredients

• 1 1/2 c fresh blackberries
• 1 chipotle chile, stemmed
• 3 tbsp light brown sugar
• 1 tsp fresh lime juice
• 1 c heavy cream
• 1 1/2 tbsp confectioners' sugar
• 1/2 tsp pure vanilla extract

Preparation

Step 1

Set a sieve over a bowl. Push the blackberries and chipotle through the sieve. Stir in brown sugar and lime juice into the puree.

Combine the cream, confectioners' sugar and vanilla and beat until soft peaks form.

Pour blackberry mixture over the cream. Use a knife to stir puree and whipped cream together.

Spoon into glasses and garnish with fresh blackberries.
