Thai Steak Salad

To prepare dressing, combine the first 5 ingredients in a small bowl, and stir well with a whisk
- Dressing:
- 1/3 c fresh lime juice
- 1 1/2 tbsp brown sugar
- 1 tbsp grated peeled fresh ginger
- 1 tbsp fish sauce
- 1-2 tsp chile paste with garlic
- Steak:
- Cooking spray
- 1 1 1/2 lb flank steak, trimmed
- 1 tbsp black pepper
- Salad:
- 3 c trimmed watercress
- 1 c thinly sliced red cabbage
- 1 c loosely packed fresh basil leaves
- 1 c loosely packed fresh mint leaves
- 1/2 c loosely packed fresh cilantro leaves
- 1/2 c julienne cut carrot
- 2 tbsp finely chopped unsalted dry roasted peanuts
Sunny's Pulled Pork Sandwiches

Prepare the pork: Combine the mustard, honey, 1 tsp salt, 1 tsp pepper, the paprika and garlic in a bowl
- Pork Sandwiches:
- 1/2 c spicy brown mustard
- 1/4 c honey
- Kosher salt and freshly ground pepper
- 1 tbsp Hungarian paprika
- 3 cloves garlic, minced
- 1 7-9 lb bone in pork shoulder, skin removed
- 10 crusty rolls, split
- Coleslaw, for serving
- Barbecue sauce:
- 2 tbsp unsalted butter
- 2 tbsp extra virgin olive oil
- 4 medium onions, chopped
- Kosher salt and freshly ground pepper
- 8 cloves garlic, minced
- 1 tsp Hungarian paprika
- 1/2 c packed light brown sugar
- 1 c apricot preserves
- 1 c ketchup
- 2 tsp hot chili sauce (sriracha)
- 2 tsp apple cider vinegar
Cheese Fondue

Toss the cheeses with the flour in a bowl
- 12 oz. gruyere cheese, shredded
- 4 oz. sharp cheddar cheese, shredded
- 2 tbsp all purpose flour
- 1 garlic clove, halved
- 1 c dry white wine
- 1 tbsp fresh lemon juice
- 2 tsp dijon mustard
- 1/4 tsp freshly grated nutmeg
- Assorted dippers for serving
Spicy Chorizo Pockets

Heat the vegetable oil in a medium skillet over medium high heat
- 2 tsp vegetable oil, plus more for brushing
- 2 links fresh chorizo, casings removed
- 1/2 tsp ground cumin
- 1/4 c fresh corn kernels or frozen corn, thawed
- 2 tbsp chopped pickled jalapenos
- 3/4 c monteray jack cheese
- 2 scallions, chopped
- All purpose flour for dusting
- 1 11 oz. tube refrigerated French bread dough
- 1 large egg
Creamy Chicken Salad

Fill a Dutch oven two thirds full of water; bring to a boil
- 2 lbs skinless, boneless chicken breast halves
- 1/2 c light mayonnaise
- 1/2 c dijon mustard
- 1/4 c red onion
- Salt and pepper to taste
- 1/3 c chopped celery
- 1/3 c craisins
- 7 tbsp toasted walnuts, roughly chopped
- 6 c mixed salad greens
Chili

If using uncooked beans, put beans in a saucepan and cover with cold water and simmer until cooked
- 1/2 c kidney beans
- 1/2 c pinto beans
- 2 cups ground beef
- 1/2 white onion, small dice
- 1/2 jalepeno, small dice
- 1/2 poblano pepper, small dice
- 1/2 green bell pepper, small dice
- 1/2 red bell pepper, small dice
- 2 cups whole, canned tomatoes
- 1 cup tomato juice
- 1/8 c brown sugar
- 1 tbsp cayenne pepper
- 1 tsp paprika
- 1/2 tsp red chili flakes
- 1 tsp cumin
- 1 tbsp chili powder
- 1/2 small can of tomato paste
- Salt and pepper
- 2 tbsp olive oil
Quinoa and Black Beans

Heat the oil in a medium saucepan over medium heat
- 1 teaspoon vegetable oil
- 1 onion, chopped
- 3 cloves garlic, peeled and chopped
- 3/4 cup uncooked quinoa
- 1 1/2 cups vegetable broth
- 1 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- salt and pepper to taste
- 1 cup frozen corn kernels
- 2 (15 ounce) cans black beans, rinsed and drained
- 1/2 cup chopped fresh cilantro
Individual Molten Chocolate Cakes

Position a rack in the middle of the oven and preheat the oven to 450 degrees F
- 4 oz. semisweet chocolate, chopped
- 1/2 c unsalted butter cut into pieces
- 2 large eggs
- 2 large egg yolks
- 1/4 c granulated sugar
- 3 tbsp all purpose flour
- Confectioner's sugar or unsweetened cocoa powder for dusting
Spiced Lamb Kebobs

Combine yogurt, cumin, paprika and garlic in a bowl
- 1 1/4 c plain greek yogurt
- 1 tsp ground cumin
- 1/2 tsp paprika
- 1 garlic clove, minced
- 1 lb boneless leg of lamb, trimmed
Spicy Corn Salad

Blanch corn in boiling, salted water for 3 minutes
- 6 ears of corn
- 1/4 c sugar
- Finely diced onion
- Red pepper
- Chilies
- Jalapeno
